Time 30m

Yield 4 servings

Number Of Ingredients 9

Nonstick cooking spray, optional
Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

Categories     Mazola®

Time 25m

Yield 4

Number Of Ingredients 12

1 lemon
¼ cup honey
1 pound salmon fillets
Freshly ground Spice Islands® Black Pepper Adjustable Grinder
1 ½ teaspoons Mazola® Corn Oil
½ cup thinly sliced red onions
2 cloves garlic, thinly sliced
1 (5 ounce) package fresh baby spinach
¼ cup dry white wine
¼ teaspoon Spice Islands® Crushed Red Pepper
⅛ teaspoon salt
1 tablespoon chopped, toasted pine nuts

Steps:

  • Preheat oven to 450 degrees F. Grate zest from lemon; set aside. Squeeze 1 tablespoon lemon juice into a small bowl. Add honey and mix well. Line a baking sheet with foil; spray foil with cooking spray. Place salmon fillets on baking sheet. Generously season with black pepper. Drizzle with half of the honey mixture. Roast salmon for 10 to 12 minutes or until fish is lightly browned and flakes easily. Brush on remaining glaze as needed. For a browner glaze, broil on HIGH the last few minutes of cooking.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic and saute 3 to 5 minutes. Add spinach and white wine. Continue to saute until spinach is wilted and most of the liquid has evaporated. Stir in 1 teaspoon lemon zest, crushed red pepper and salt. Divide spinach evenly on top of salmon fillets; sprinkle with pine nuts. Serve immediately.

Tips:

  • Choose the right salmon fillet. Look for a fillet that is about 1 inch thick and has a deep pink color. Avoid fillets that are thin or have a lot of white streaks.
  • Use fresh herbs. Fresh herbs will give your salmon a more flavorful taste. If you don't have fresh herbs on hand, you can use dried herbs, but use about half the amount.
  • Don't overcook the salmon. Salmon is a delicate fish and it can easily be overcooked. Cook it until it is just cooked through, or until it flakes easily with a fork.
  • Serve the salmon immediately. Salmon is best served immediately after it is cooked. If you need to keep it warm, you can tent it with foil and place it in a warm oven.

Conclusion:

Honey lemon glazed salmon with spinach sauté is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The salmon is cooked to perfection and the honey lemon glaze gives it a sweet and tangy flavor. The spinach sauté is a healthy and flavorful side dish that complements the salmon perfectly. This dish is sure to be a hit with your family and friends.
