2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 cup honey
1/3 cup butter or 1/3 cup margarine, softened
1/4 cup granulated sugar
1 tablespoon finely grated lemon peel
1 egg
1 cup powdered sugar
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350°F
  • In a small bowl, combine flour and baking soda. Beat honey, butter, sugar and lemon peel with an electric mixer, in a large bowl, until creamy. Add egg substitute and beat until smooth. Reduce speed to low and gradually stir in flour mixture until blended.
  • Drop dough by rounded teaspooons 2 inches apart on nonstick or lightly greased cookie sheets. Bake for 7 to 8 minutes or until lightly browned. Cool completely on wire racks.

1/3 cup butter, softened
1/2 cup sugar
1/2 cup honey
1 large egg
1 teaspoon grated lemon zest
2-1/4 cups all-purpose flour
1/2 cup toasted wheat germ, divided
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a bowl, cream butter and sugar. Beat in the honey, egg and lemon zest. Combine the flour, 1/4 cup wheat germ, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle., Roll dough into 1-in. balls; roll in remaining wheat germ. Place 2 in. apart on baking sheets coated with cooking spray.
