This ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

1 (5 pound) ready-to-eat ham
¼ cup whole cloves
¼ cup dark corn syrup
2 cups honey
⅔ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

4 cups self-rising flour, plus more for dusting
1 teaspoon kosher salt
5 tablespoons salted butter, cubed and chilled
3 tablespoons shortening, chilled
1 1/2 cups buttermilk
10 tablespoons salted butter, melted
1/4 cup honey
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley
12 thick-cut slices ham steak, halved
12 slices Swiss cheese

Steps:

  • For the biscuits: Preheat the oven to 475 degrees F.
  • Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
  • Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
  • For the topping: Brush the biscuit tops with 2 tablespoons of the melted butter and bake until golden, 13 to 15 minutes. Allow the biscuits to cool slightly, 4 to 5 minutes.
  • Meanwhile, whisk together the honey, Dijon, parsley and remaining 8 tablespoons melted butter in a small saucepan over medium heat. Bring to a simmer and remove from the heat.
  • For the sandwiches: Preheat the broiler.
  • Split the biscuits in half and return to the baking sheet cut-side up. Brush the cut sides with the honey butter. Place 2 halved ham pieces on the bottom of each biscuit and top each with a slice of cheese. Broil until the cheese is melted, 1 to 2 minutes. Carefully remove from the oven and pour over the remaining honey butter. Place the tops on the biscuits and serve.

Whole cloves, if desired
1/4 cup honey
1/4 teaspoon ground cloves

  • Place ham, fat side up, on rack in shallow roasting. Insert meat thermometer into ham surface at a slight angle or through the end of the ham so tip is in center of thickest part of ham and does not touch bone or fat.
  • Roast 12 to 16 minutes per pound in 325°F oven or until thermometer reads 120°F.
  • Remove ham from oven. Pour drippings from pan. Remove any skin from ham. Cut fat surface of ham lightly in uniform diamond shapes; insert whole clove in each diamond.

  • Cover ham with tent of aluminum foil and let stand about 10 minutes or until thermometer reads 140°F.
