Time 40m

Number Of Ingredients 10

3 lbs carrots, sliced into matchsticks
3 tbsp. butter
1 1/4 cup vegetable broth
1/2 cup honey
1/4 cup sherry
4 garlic cloves, minced
1 tbsp. coarse mustard
Pinch of cayenne pepper
Salt and pepper
Fresh thyme

Steps:

  • Over medium-high heat, add butter to a large pan and fry carrots for about 5 minutes. While carrots are cooking, combine the broth, honey, sherry, garlic, mustard, cayenne, salt, and pepper.
  • Pour in liquid mixture, bring to a boil, season with salt and pepper. Throw in a bunch of fresh thyme sprigs (and I just leave them whole!) reduce heat and simmer, covered, for 10 minutes.
  • Uncover, and raise heat to medium-high, cooking for another 8-10 minutes, or until carrots are tender. Bring temperature to high heat if you find you still have a lot of liquid in your pan after 8 minutes. You still want some liquid, but not where it is soupy.
  • Remove thyme sprigs and serve beside your main dish!

Cooking carrots in a bit of water, butter, and sugar brings out their delicate flavor and coats them with a thin glaze. Instead of baby carrots, you can substitute medium carrots, cut into thin slices. Dill or parsley would work here as well.

Provided by Irmgard

Categories     Vegetable

Time 30m

Yield 6 serving(s)

Number Of Ingredients 5

1 garlic clove, crushed
1 ounce butter
2 sprigs thyme leaves
750 g baby carrots
2 cups chicken broth

Steps:

  • Put the garlic, butter, and thyme in a large wide pan and cook for a couple of minutes.
  • Add the carrots and toss together, then pour in enough stock to barely cover the carrots.
  • Cover and simmer for 10 to 15 minutes until just tender, then increase the heat and cook until all the stock has evaporated and the carrots are glazed.
  • Season with salt and pepper and serve.

Tips:

  • Choose the right carrots: For the best results, use fresh, young carrots. They should be firm and smooth, with no blemishes or bruises.
  • Peel the carrots: Before cooking, peel the carrots to remove the outer layer. This will help the glaze to adhere better.
  • Cut the carrots into uniform pieces: This will help them cook evenly. You can cut them into rounds, slices, or sticks.
  • Use a non-stick skillet: This will prevent the carrots from sticking and burning.
  • Don't overcrowd the skillet: Cook the carrots in batches if necessary to avoid overcrowding the skillet. This will help them cook evenly.
  • Cook the carrots over medium heat: This will help them to caramelize and develop a nice glaze.
  • Stir the carrots frequently: This will help them to cook evenly and prevent them from burning.
  • Add the glaze ingredients: Once the carrots are tender, add the honey, butter, garlic, thyme, and salt and pepper. Stir to coat the carrots evenly.
  • Continue to cook the carrots: Cook the carrots for a few more minutes, or until the glaze has thickened and caramelized.
  • Serve the carrots: Serve the carrots immediately, while they are still hot. They can be served as a side dish or as a main course.

Conclusion:

Honey glazed carrots with garlic and thyme is a delicious and easy-to-make side dish that is perfect for any occasion. The carrots are tender and flavorful, with a slightly sweet and savory glaze. The garlic and thyme add a nice depth of flavor, and the honey gives the carrots a beautiful golden brown color. This dish is sure to be a hit with everyone at your table.
