HONEY-GINGER CHICKEN STIR-FRY
When I was first married, we didn't have a working oven or grill, so I had to use the stovetop for everything. After a few months of the same thing, I needed some new ideas and developed this simple chicken stir-fry. I make half of it when we're home alone and can easily double it for company. -April Walcher, Hutchinson, Kansas

This recipe uses breaded chicken. I suggest Recipe #466587 for the chicken. This is a tasty stir fry that uses one seasonal ingredient so its it can be a seasonal dish. It can serve 2-4 people depending on the amount of bread chicken pieces used. I use 8-11 pieces per person. This recipe can be doubled.

Tips:
- Prep your ingredients beforehand: Slicing the ginger, garlic, and chicken into uniform pieces before starting the stir-fry process will ensure that they cook evenly.
- Use a well-seasoned wok or skillet: A seasoned wok or skillet will help prevent the chicken and vegetables from sticking and burning.
- Don't overcrowd the pan: Cooking the chicken and vegetables in batches will prevent them from steaming and ensure that they get evenly cooked.
- Cook the chicken until it's cooked through: Make sure that the chicken is cooked through before adding the vegetables to the stir-fry. This will help prevent any potential foodborne illnesses.
- Add the vegetables towards the end of the cooking process: Vegetables cook quickly, so they should be added towards the end of the stir-fry to prevent them from becoming overcooked.
- Use a cornstarch slurry to thicken the sauce: Adding a cornstarch slurry to the stir-fry sauce will help thicken it and give it a glossy appearance.
- Serve the stir-fry immediately: Stir-fries are best served immediately after they are cooked to enjoy the fresh flavors and textures of the ingredients.
