3 ½ tablespoons soy sauce, divided
2 tablespoons rice vinegar
2 ½ tablespoons olive oil, divided
½ tablespoon black sesame oil
2 teaspoons white sugar
1 pound boneless, skinless chicken breasts, cubed
3 tablespoons honey
3 tablespoons brown sugar
2 tablespoons oyster sauce
2 teaspoons mustard powder
1 ½ teaspoons fresh minced garlic
½ cup water
3 tablespoons potato starch
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 tablespoon toasted sesame seeds, or to taste

Steps:

  • Combine 2 tablespoons soy sauce, rice vinegar, 1/2 tablespoon olive oil, sesame oil, and sugar in a resealable bag. Add cubed chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate for 30 minutes to 1 hour.
  • Meanwhile, mix together honey, brown sugar, oyster sauce, the remaining 1 1/2 tablespoons soy sauce, mustard powder, garlic, and water in a small saucepan. Warm mixture over medium heat until sugar has dissolved and all ingredients are completely incorporated, 3 to 5 minutes.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Combine potato starch, salt, and pepper in a shallow bowl. Dredge chicken cubes in the potato starch mixture, ensuring all sides are covered.
  • Heat the remaining 2 tablespoons olive oil in a skillet. Add chicken and fry on all sides until golden brown, 2 to 3 minutes per side. Pour sauce over chicken pieces and toss to coat. Sprinkle with toasted sesame seeds.

Tips:

  • Use fresh ingredients: Fresh garlic and ginger will give your dish the best flavor. If you can, use organic, free-range chicken.
  • Don't overcrowd the pan: When cooking the chicken, make sure to not overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it is golden brown: This will ensure that the chicken is cooked through and has a nice flavor.
  • Make sure the sauce is thick and glossy: The sauce should be thick and glossy, not watery. If it is too thin, you can add a cornstarch slurry to thicken it.
  • Serve immediately: Honey garlic sesame chicken is best served immediately, while it is still hot and crispy.
