1/2 teaspoon baking soda

1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)

1/2 cup raisins

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.

I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

3/4 cup butter or 3/4 cup oil
3/4 cup brown sugar, packed
1 egg
1/2 cup honey (molasses can also be used)
2 cups whole wheat flour
1/2 cup white flour
1 teaspoon fine sea salt (reg salt can be used)
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons flax seeds
1/3 cup oats

Steps:

  • Cream together butter (or oil) and brown sugar.
  • Stir in egg and honey and mix well.
  • Fold in your dry ingredients (including the flax) and mix.
  • Cover with a towel and chill for about 2 hours.
  • Preheat oven to 350°.
  • Make dough into small balls (you can roll in additional flax seeds if you want).
  • Place on lightly greased cookie sheet.
  • Bake for about 9 minutes.
  • Remove and let cool on flat surface or wire rack.

⅔ cup triticale flour
½ cup rolled oats
1 ⅛ cups all-purpose flour
⅓ cup whole wheat flour
1 ½ teaspoons ground ginger
½ teaspoon ground cinnamon
½ teaspoon baking soda
⅛ teaspoon salt
5 tablespoons fruit-based fat substitute
⅓ cup honey
⅓ cup granular sucrolose sweetener (such as Splenda®)
1 teaspoon vanilla extract
⅓ cup orange zest
½ cup chopped crystallized ginger
⅓ cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Place half of the oats, and half of the triticale into a blender or food processor, and grind into a fine powder. Transfer to a medium bowl, and combine with the remaining oats, triticale, all-purpose flour, whole wheat flour, ginger, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, mix together the fat substitute, honey, and sucrolose sweetener until smooth. Mix in the vanilla and orange zest. Add the dry ingredients, and mix until well blended. Finally, stir in the chopped candied ginger and cranberries. Drop by heaping teaspoonfuls onto the prepared baking sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden. Cool on baking sheets for at least 5 minutes before removing to wire racks to cool completely.

For the Dough
butter, for greasing
1 3/4 cups (200 g / 7 oz) all-purpose (plain) flour
pinch of salt
2 tablespoons superfine (caster) sugar
1 1/2 tablespoons olive oil
1/2 tablespoon grated lemon zest
1/2 teaspoon vanilla extract
1 1/2 teaspoons ammonium bicarbonate or baking soda (bicarbonate of soda)
equal quantities olive and corn oil, for deep-frying
finely chopped walnuts, for sprinkling
For the Syrup
1 1/4 cups (250 g / 9 oz) superfine (caster) sugar
1/2 cup (120 ml / 4 fl oz) honey

Steps:

  • Preheat the oven to 400°F (200°C/Gas Mark 6) and grease 2 cookie sheets (baking trays) with butter. Sift together the flour and salt into a large bowl and make a well in the center. Add the sugar, oil, lemon zest, and vanilla. Stir the baking soda into 5 tablespoons water in a bowl and pour into the well. Using a spoon, gradually incorporate the dry ingredients, then knead gently to a soft and pliable dough, adding a little more water if necessary. Break off small pieces of dough and roll into cylinders the size of your thumb, then press lightly to flatten. Put them onto the prepared baking sheet, spaced well apart, and bake for 20-25 minutes, or until lightly golden. Remove from the oven. To make the syrup, put the sugar, honey, and 1 1/4 cups (300 ml / 1/2 pint) water into a pan and bring to a boil. Boil for 5 minutes, then remove from the heat. Pour a mixture of equal parts olive and corn oil into a heavy pan to a depth of 3 inches (7.5 cm) and heat it to 375°F (190°C), or until a cube of bread browns in 30 seconds. Carefully drop batches of the cookies into the hot oil and fry for a few minutes, until golden brown. Remove with a slotted spoon, drain well, and drop into the hot syrup. Let absorb syrup for 3-4 minutes. Remove with a slotted spoon, transfer to a serving platter, and sprinkle with finely chopped walnuts.
