HONEY-MARINATED BEEF SATAY WITH SPICY BUTTER SAUCE
Steps:
- Soak the bamboo or wooden skewers in water for 30 to 60 minutes. Drain and pat dry. With a sharp knife, cut the steak into 24 long, thin strips. Thread 1 strip onto each skewer, weaving the skewer back and forth along the length of each steak strip. Arrange the skewers on a large platter or baking tray. Cover with plastic wrap and refrigerate until needed.
- About 30 minutes before you wish to grill the skewers, combine the soy sauce, honey, chili flakes, cumin, turmeric, and oil in a small bowl. Pour this marinade over the steak skewers, turning to coat the meat evenly. Leave the steak skewers to marinate at room temperature for about 20 minutes.
- Preheat a hinged grill or panini maker, according to the manufacturer's instructions, or preheat a broiler, outdoor grill or stovetop grill pan.
- Meanwhile, make the sauce: Bring a small saucepan of water to a boil. Add the garlic cloves and blanch them in the boiling water for 30 seconds to a minute to remove some of their harshness. Drain the cloves well, pat them dry with paper towels, and chop them finely. In a small skillet, melt 2 tablespoons of the butter over medium-high heat. Add the garlic, ginger and green onion and saute just until they begin to soften and smell fragrant, about 2 minutes. Add the stock, soy sauce, honey, hoisin or barbecue sauce, and chili flakes and bring to a boil. Cook for 1 to 2 minutes longer. Pour the sauce through a strainer into a clean pan and, over medium heat, whisk in the remaining 2 tablespoons of butter, a little bit at a time. Keep warm.
- Grill the skewers (in batches if necessary to prevent overcrowding) until cooked through and nicely browned, about 2 minutes total on a hinged grill or panini maker or 2 minutes per side in the broiler, in a grill pan, or on an outdoor grill (1 minute if you want the meat rare). Take care that the skewers don't prevent a hinged grill or panini maker from closing properly. Transfer to a platter, pour on the sauce, and serve; or serve with the sauce on the side for dipping.

PAM'S HONEY BUTTER GLAZER SAUCE
I made up this recipe for one of our members who was looking to reproduce a dessert her son got at a restaurant. See this link for original post) http://s2.justapinchassets.com/images/title/1/GroupTopics.20120518111647.png They have trademarked the name "Glacier Sauce", and I do not know if this is anything like theirs, but...

Steps:
- 1. Mix cold water and honey in a 3 to 4c microwaveable bowl. Microwave for two minutes, stirring after the first minute and again every 15 to 20 seconds until liquid is bubbling at the edges. (When you stir, it may foam up a bit, but it will return to liquid quickly with stirring.) Be careful that you do not let it go too long between stirring or it may bubble over when stirred.
- 2. Mix the cornstarch with the extra water in a small cup. Remove the bowl from the microwave and whisk in the cornstarch mixture. This will look slightly cloudy. Replace the mixture in the microwave and cook again on high for two or three - 15 second intervals, stirring again between each. The mixture should be clear and translucent at this point. It should be thickened but not "stiff". More like a glaze.
- 3. Remove the bowl from the microwave and whisk in orange juice, lemon juice, salt and vanilla. If these liquids thin it down too much, replace the mixture in the microwave and cook again on high for two or three - 15 second intervals, stirring again between each. (I did not have to do this, but if you want a thicker glaze, you might need to do it)
- 4. Whisk in cubed cold butter about a tablespoon at a time, whisking until butter has melted before adding more. Continue to whisk in butter cubes until all are used and sauce is somewhat cool. Store in fridge in a clean bottle or jar, or use immediately.
- 5. I have not tried this glaze on anything but some fresh fruit, but I think it would make an excellent pancake syrup, or plating sauce for a dessert or glaze for cakes. I would be tempted to add some more lemon and some zest and use it for glazing BBQ chicken. (I asked my husband to try a spoonful and as he tasted it, I said "How does this taste?" and before I finished the sentence, he answered "Good!")
- 6. I forgot to add: All microwaves are not created equal, so you may need to cook more or less depending on the wattage of your microwave. Just do it in small increments to get it to the right consistency. I think you can tell about how thick to make it from the pics I posted. The finished sauce was thinner than a stirred yogurt, but not "drippy". Hope this helps.

Steps:
- 1. Preheat over to 400. Combine bread crumbs, salt, pepper & paprika in a shallow bowl. Dredge chicken pieces in mixture. Pout 8 tbsp of melted butter into 9x13 baking pan. Add pieces of chicken in a single layer, turning chicken to coat with butter. Bake skin-side down for 30 mins. While chicken is cooking, make sauce my melting the butter in a small pan & beating in the honey & lemon juice. Turn chicken pieces, pour Honey Butter Sauce over, and bake for an additional 30 mins or until tender. Spoon pan juices over chicken & serve.
Tips:
- Use unsalted butter: This allows you to control the amount of salt in the sauce and prevents it from becoming too salty.
- Bring the butter and honey to room temperature before mixing: This will help them combine smoothly and create a creamy sauce.
- If the sauce is too thick, add a little bit of milk or cream: This will help to thin it out and make it more pourable.
- If the sauce is too thin, simmer it over low heat until it thickens: Stir constantly to prevent it from burning.
- Season the sauce to taste with salt and pepper: You may also want to add a pinch of cayenne pepper or garlic powder for extra flavor.
- Serve the sauce warm over chicken, fish, pork, or vegetables: It can also be used as a dipping sauce for bread or crackers.
Conclusion:
Honey butter sauce is a versatile and delicious sauce that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you are looking for a sweet and savory sauce for your next chicken dinner or a simple dipping sauce for your favorite snacks, honey butter sauce is sure to please.
