HONEY BANANA BREAD

I got this recipe from a friend, who got it at a Weight Watchers meeting. It's so delicious you won't believe you're eating low fat! It doubles perfectly (I never make just one loaf!) and if you don't have enough banana, just use applesauce for the balance. It works like a charm. Enjoy!!! 2 points per 1/16 of a loaf.

Tips:

  • Choose ripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be. Look for bananas with yellow skins that are mostly covered in brown spots.
  • Mash the bananas thoroughly: Make sure to mash the bananas until they are completely smooth and free of lumps. This will ensure that they are evenly distributed throughout the batter and that the bread has a consistent texture.
  • Use room temperature ingredients: This will help the ingredients mix together more easily and create a smooth batter. If your eggs or butter are cold, let them sit at room temperature for about 30 minutes before using.
  • Do not overmix the batter: Overmixing the batter can develop the gluten in the flour, which will make the bread tough. Mix the batter just until the ingredients are combined.
  • Bake the bread until a toothpick inserted into the center comes out clean: This is the best way to ensure that the bread is cooked through. If the toothpick comes out with batter or crumbs attached, continue baking for a few more minutes.

Conclusion:

Honey banana bread is a delicious and easy-to-make treat that is perfect for breakfast, lunch, or a snack. With its moist, flavorful crumb and sweet honey glaze, this bread is sure to be a hit with everyone who tries it. So next time you have some ripe bananas on hand, be sure to give this recipe a try.
