Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 lb mild Italian sausage, casings removed
1 medium onion, diced
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (15 1/2 ounce) can black beans, undrained
1 (15 ounce) can yellow hominy, drained
1 can condensed tomato soup
3 1/2 cups water
2 cups beef broth or 2 cups beef bouillon
1 cup of your favorite salsa (optional)
1 teaspoon dried parsley

Steps:

  • Brown sausage in a large Dutch oven or soup pot and drain fat.
  • Add diced onion and cook until tender.
  • Add everything else but the parsley and stir until blended.
  • Bring soup to a boil and then reduce heat to low and allow to simmer for about an hour.
  • Stir in the parsley and season to taste (taste it first, you may not need any additional seasoning).
  • Serve with sourdough breadsticks warm from the oven.

Tips:

  • Use a variety of hominy. White hominy is the most common type, but you can also find yellow, blue, and black hominy. Each type has a slightly different flavor and texture.
  • Rinse the hominy thoroughly before cooking. This will remove any excess starch and help to prevent the soup from becoming too thick.
  • Use a flavorful sausage. A good quality sausage will add a lot of flavor to the soup. Andouille sausage, chorizo, and kielbasa are all good choices.
  • Don't overcook the hominy. Hominy should be cooked until it is tender but still has a slight bite to it. Overcooked hominy will become mushy.
  • Season the soup to taste. Add salt, pepper, and other spices to taste. You can also add a splash of vinegar or lemon juice for a bit of brightness.

Conclusion:

Hominy sausage soup is a hearty and flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. Whether you like your soup spicy or mild, you are sure to enjoy this delicious and satisfying dish.
