1 pound smoked sausage, cut into 1/4-inch slices
1 teaspoon olive oil
2 cups cubed fully cooked ham
2 packages (8 ounces each) red beans and rice mix
6 cups water
2 tablespoons butter
1/4 teaspoon cayenne pepper
1 can (29 ounces) hominy, rinsed and drained
1 jar (12 ounces) pickled jalapeno peppers, drained and chopped
1 can (15-1/4 ounces) whole kernel corn, drained
1 cup shredded cheddar cheese
1 cup corn chips, crushed

Steps:

  • In a Dutch oven, brown sausage in oil; drain and set aside. In the same pan, brown ham cubes. Stir in the red beans and rice mix, water, butter and cayenne. Bring to a boil. 1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. This was one of those staple meals that Mom came up with when funds were low...It's just simple, cheap, comort food and it's the only way my siblings and I would ever eat hominy...I still love it! (NOTE: I add 1 tsp. parsley flakes to it when I season with salt & pepper, but that's not part of the original recipe...AND, I prefer to use Sage flavored sausage.)

1 lb ground sausage (Maple flavor or Sage flavor, according to your preference)
1/2 onion, finely diced
1/2 tablespoon minced garlic
2 (14 1/2 ounce) cans yellow hominy, drained (or white)
1 tablespoon butter
salt & pepper

Steps:

  • In a large skillet, brown the sausage and cut into chunks. Remove sausage and drain grease but leave drippings in the pan.
  • Saute onion and garlic in butter in the same pan with the sausage drippings. Add hominy and cook over medium heat stirring frequently, until heated through. Sprinkle with salt & pepper to taste.
  • Add sausage back to the skillet for about 5-10 minutes, stirring frequently until heated through.
  • Serve with big, fluffy biscuits with butter and honey! YUM!
  • Oh, just a NOTE: My brother and my Dad always mixed in some catsup with theirs -- I used to put some on the side and dip the sausage into it -- Mom didn't care much for that when we added catsup, though! LOL!

8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

1 lb smoked sausage, sliced in 1/4 in slices
1 teaspoon olive oil
2 (8 ounce) packages red beans and rice mix
2 cups of cooked cubed ham
6 cups water
2 tablespoons butter
1/4 teaspoon cayenne pepper
1 (12 ounce) jar pickled jalapeno peppers, drained and chopped
1 (29 ounce) can hominy, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 cup shredded cheddar cheese
1 cup corn chips, crushed

Steps:

  • In a Dutch Oven Brown sausage in oil, drain and set aside. In the same pan, brown the ham cubes. Stir in the red beans and rice mix, water, butter and cayenne. Bring all of this to a boil and the reduce the heat, place the cover on pan and simmer for 25 minutes or until the rice and beans are tender. Stir occasionally. Then transfer to a greased 3 quart baking dish. Layer the rice bean mix with the sausage and hominy. Top with the peppers and corn. Bake uncovered at 350 for 30-35 minutes or until heated through. Sprinkle the cheese and bake a few more minutes until cheese melts. Then sprinkle with corn chips.
