- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x9-inch casserole dish with cooking spray.

- Cut the chicken into 8 pieces. Rinse it under cold water and pat dry. Heat the butter in a skillet and when it foams, quickly sauté the chicken pieces, turning them so that they cook on both sides but do not brown. This seizes the skin so it does not shrivel during cooking. Drain the chicken on paper towels.
- Put the hominy in a 2-quart casserole with a lid. Lay the chicken pieces on top and cover with an even layer of onion, sliced mushrooms, and carrot. Add the bay leaf and sprinkle the pepper and dried thyme over the vegetables. Add the wine and cover the casserole.
- Cook in a preheated 325°F degree oven for 45 minutes. About 5 minutes before the casserole is finished cooking, add the salt and parsley. Take it from the oven and remove the bay leaf. Taste and add the cream if you want it. I do not always add it.

- Grease an eight-quart oven-proof casserole. Preheat oven to 350 degrees.

- 1. Drain and rinse hominy; set aside.
- 2. Cook bacon and crumble; set aside.
- 3. Peel and slice shallots. Peel and mince garlic.
- 4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
- 5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
- 6. Blend in 1 cup of the cheese and stir until melted.
- 7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.
- 8. Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.
- 9. Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.

- 1. Preheat oven to 350. Using a skillet brown beef and crumble beef. Add onion and pepper and cook until pepper is done . Drain off liquid. I use a colander for draining. - 1. Place the poblano chiles directly on a gas flame or under the broiler, turning occasionally, until blackened. Put the charred chiles in a paper sack or bowl covered with plastic wrap to steam. Once cool enough to handle, rub off the skin, remove the stem and seeds, and dice the chiles.
- 2. Preheat the oven to 350.
- 3. Heat an oven-safe pan (preferably cast iron) over medium heat and add the oil. Once hot, cook the chorizo until brown, about 8-10 minutes. With a slotted spatula, remove the chorizo and place on paper towels to drain. Drain any excess grease from the skillet, leaving about 1 teaspoon. Add the onions and jalapeños to the skillet and continue cooking on medium-low heat until onions are translucent, about 5 minutes. Add the garlic and cook for 30 more seconds.
- 4. Remove the skillet from the heat and add the diced poblano chiles, cooked chorizo, hominy, sour cream, cumin, cayenne, cilantro, lime juice and half of the cheddar cheese. This is a recipe from The Grange Cookbook I got in the 70's. When our daughter was a toddler, she tried to flush it down the toilet! When she went out on her own, I gave her the cookbook along with my very first one my dad gave me. It is very versatile. I'm listing the original recipe, but through the years I have added different things to it, such as left over squash casserole, Velveeta instead of cheddar, soy sauce, or beef bouillon to make a soup rather than a casserole. - 1. Heat oven to 325^. Grease a 2 quart casserole and set aside. Add the bacon grease in a medium saucepan heat to melt over medium heat . Add the onion and pepper and sauce until tender; about 2 minutes; then add the soup, milk and hominy to the pan with the mixture. Stir to combine.
- 2. Now add the mustard, olives, and salt and pepper to taste. stir to combine. CHARLESTON'S HOMINY GRILL SQUASH CASSEROLE

- Preheat oven to 350 degrees. Grease an 8x8 baking dish, dust with bread crumbs and set aside. Heat butter in a large skillet over medium heat. Add the onion and celery and cook, stirring occasionally until edges of onion start to turn golden brown. Add garlic and cook another minute. Add squash and cook until tender and slightly browned, approximately 30 minutes. Set aside to cool. In medium bowl,combine the beaten eggs, cheeses, basil, parsley, Tabasco, salt, pepper, nutmeg and sugar. Set aside. Pulse 1/3 of the squash mixture in a food processor until it is chunky-smooth. Add back to the bowl with the rest of the squash and the egg and cheese mixture and stir to combine. Pour the mixture into the prepared baking dish and top with an even coating of the breadcrumbs.
