HOMINY AND BACON
Hominy and bacon in a simmered milk gravy. A great accompaniment to eggs. An old old breakfast side dish served in logging camps and homes in the Pacific Northwest. My Grandmother, who was born in the late 1800s, told me her mother ate this as a child.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain grease from the skillet. Crumble the bacon, and return it to the skillet. Reduce heat to medium, and add hominy and evaporated milk, and cook, stirring often. Let it bubble, but don't let the milk scorch. Cook until thickened, 10 to 15 minutes.

Tips:
- Use fresh hominy: Fresh hominy has a more tender texture and a sweeter flavor than canned hominy. If you can't find fresh hominy, you can use canned hominy, but be sure to rinse it well before using.
- Cook the hominy until it is tender: Hominy should be cooked until it is tender but still has a slight bite to it. Overcooked hominy will be mushy and bland.
- Use high-quality bacon: The quality of the bacon you use will make a big difference in the flavor of the dish. Use thick-cut, smoked bacon for the best results.
- Don't overcrowd the pan: When cooking the bacon and hominy, be sure not to overcrowd the pan. This will prevent the ingredients from cooking evenly.
- Season the dish to taste: Season the dish with salt, pepper, and other spices to taste. You can also add a splash of hot sauce or vinegar for extra flavor.
Conclusion:
Hominy and bacon is a simple but flavorful dish that is perfect for a quick and easy meal. It is also a great way to use up leftover hominy and bacon. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying dish that the whole family will enjoy.
