Pico de gallo is a refreshing and flavorful Mexican salsa made from fresh, chopped ingredients. It is typically made with tomatoes, onions, cilantro, and jalapeños, and is often served as a condiment for tacos, burritos, and other Mexican dishes. Pico de gallo is also a popular party appetizer, and can be served with tortilla chips, crackers, or vegetables.
This article features three different recipes for pico de gallo, each with its own unique flavor profile. The first recipe is a classic pico de gallo, made with tomatoes, onions, cilantro, and jalapeños. The second recipe adds in some sweetness with the addition of mango, and the third recipe uses roasted tomatoes for a smoky flavor. All three recipes are easy to make and can be tailored to your own taste preferences.
HOW TO MAKE PICO DE GALLO
Sometimes when you eat authentic Mexican food, they give you this salsa stuff made with tomatoes, onions, and jalapenos. You can add a squeeze of lime juice to pico de gallo, but I prefer this basic recipe. Once you serve this with your Mexican dish such as tacos, you will want it with all your Mexican dishes!

PICO DE GALLO
This easy pico de gallo recipe is a classic for good reason. It pairs with just about everything! My tip is to let it chill for an hour or two before serving to help the flavors blend. Also, it's best to serve it the same day that it's made. -Jeannie Trudell, Del Norte, Colorado

HOMER'S TRADITIONAL PICO DE GALLO
This is a tradional Pico de Gallo recipe that has been in my family for several generations. Many current recipes are variations of this simple one, and their taste is cluttered by garlic or other spices not usually included in the traditional recipe. This makes a great dip for tortilla chips, or in a layered bean dip. One can make great guacamole by smoothing out ripe avocadoes and adding this pico with a little more lime juice and salt to taste. I use a minimum of salt, so you may need to add more to suit your taste.

Steps:
- Dice up equal quantities of onion and tomato. Roughly chop the cilantro.
- Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don't want to cause any fires. Now dump the four ingredients into a bowl.
- Slice the lime in half and squeeze the juice from half a lime the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed.
