A retro candy recipe.

2 tbsp butter (29g), softened
1/2 cup (40g) unsweetened cocoa powder
3 cups(360g) confectioners' sugar
1 tsp vanilla extract
3/4 cup (85g) dry milk powder*see note below
1/2 cup (120 ml) white corn syrup

Steps:

  • 1. Note that that is dry milk powder, not instant milk. Throw all of the ingredients into one large mixing bowl and knead it until it looks like one large lump of tootsie. It will have the consistency of Play-Doh. It may not seem like there's enough moisture in there when you start, but keep with it and it should turn out just fine. To make your own rolls, just tear off a chunk of the tootsie dough, roll it up, and cut pieces off. Eat it up right there or wrap it in plastic wrap or wax paper to save it for later.

This recipe is courtesy of one of my most favorite cooks who rock, "Paula Deen"! Since Halloween and the Holidays are right around the corner, I thought maybe someone would like to make these. Besides who doesn't like Tootsie Rolls, right? Paula says they are easy to make!!

12 oz semisweet chocolate chips
1/2 c light corn syrup
3/4 tsp water, warm
1 3/4 tsp orange extract
wax paper or colored foil for wrapping

Steps:

  • 1. Directions Line a baking tray (with sides) with plastic wrap and set aside.
  • 2. In a medium microwave safe bowl, melt chocolate. Stop to stir every 5-10 seconds so chocolate will not burn. Add the remaining ingredients and stir well. Scrape mixture onto the prepared baking sheet and press down with the back side of a spatula to a 1" thickness.
  • 3. (Paula's Note: It will not completely cover the pan). Cover mixture with another piece of plastic wrap and let it set overnight at room temperature. The mixture will be stiff, but still moldable and flexible the next day.
  • 4. Peel off the plastic wrap and cut into strips (about 1/2"-3/4" wide). Form each strip into a log and roll out the logs between your hands or on your work surface until they are about 1/2" in diameter. Cut into sections as long as you like and set aside for a few minutes to harden up again after you have heated them with your hands. Wrap in waxed paper or colored foil squares.
  • 5. Paula's Gift Packaging Tip: I love giving gifts in vintage containers I find while junkin'. With my Homemade Tootsie Rolls, I wrapped them in silver foil candy squares and filled a Vintage drinking glass. I finished with a coordinating gross grain ribbon tied on the glass.

Tips:

  • Use a candy thermometer. This will ensure that the sugar syrup reaches the correct temperature, which is essential for the success of the recipe.
  • Be careful when handling the hot sugar syrup. It can cause severe burns.
  • Work quickly when pouring the sugar syrup into the mold. The syrup will start to set quickly, so you need to work quickly to get it all into the mold before it hardens.
  • Let the tootsie rolls cool completely before cutting them. This will help to prevent them from sticking to the knife.
  • Store the tootsie rolls in an airtight container at room temperature. They will keep for up to 2 weeks.
