1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

2 eggs, beaten
1 cup panko breadcrumbs
Four 6- to 8-ounce white fish fillets
4 hoagie rolls
2 cups shredded lettuce
1/2 cup pickle slices
1/2 cup Homemade Tartar Sauce, recipe follows
1/2 cup good mayonnaise
2 tablespoons chopped chives
2 tablespoons roughly chopped cornichons
2 tablespoons fresh parsley leaves
1 tablespoon capers

  • In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
