HOMEMADE GIBLET STUFFING FOR TURKEY OR CHICKEN

Homemade Giblet Stuffing for Turkey or Chicken image

In my photo you will notice a darker portion of the stuffing; this was the bit that was stuffed into the turkey itself and after roasting it has a crispy outside coating. This is a delicious savoury stuffing that I make every year for Thanksgiving. During the year I love to make it with a whole chicken minus the giblets as I can't find chickens that come with giblets in the UK. It's fantastic and whatever doesn't fit in the bird you can bake on the side. Note: I sometimes like to use a mixture of white and brown bread in this recipe. NOTE: Since the giblets will take a while you can do everything else while they are cooking.

Time 2h23m

Yield 12 to 14 servings

Number Of Ingredients 23

10 large eggs
1 cup (2 sticks) unsalted butter, divided
1 1/2 pounds ground beef (ground 3 times)
1 1/2 pounds ground pork (ground 3 times)
3 large yellow onions, finely chopped
15 garlic cloves, finely chopped
1 cup steak sauce
1/2 cup apple cider vinegar
1 lemon, zested
1 tablespoon ground cumin
1 tablespoon dried oregano
Kosher salt and freshly ground black pepper
1 red bell pepper, seeded, ribbed and finely chopped
1 green bell pepper, seeded, ribbed and finely chopped
5 celery stalks, thinly sliced
4 bunches scallions, white and light green parts only, finely chopped (about 1 1/2 cups)
1 (6-ounce) can tomato paste
5 slices white bread
1/3 cup milk
1 pound cooked Italian sausage, sliced
1 cup raisins
1 cup finely chopped flat-leaf parsley
1 cup small pimento-stuffed olives

Steps:

  • To prepare the stuffing: Place the eggs in a large saucepan and cover with water. Bring the water to a boil, cover, and turn off the heat. Let the eggs sit for 10 minutes. Set aside to cool completely before peeling and chopping.
  • Melt 1/2 cup (1 stick) of the butter in a large pot over medium heat. Add the beef and pork; cook until the meat is starting to brown, about 15 minutes. Add 1/2 cup of the chopped onions and half of the chopped garlic, along with the steak sauce, vinegar, lemon zest, cumin, and oregano; season with salt and pepper. Cook, stirring often, until the onions are completely tender and the meat is cooked through, 30 minutes. Turn off the heat and transfer the meat mixture to a large bowl to cool. Add the tomato paste and cook until the vegetables have softened, about 15 minutes. Soak the bread in the milk for 3 minutes. Squeeze as much liquid from the bread as you can and then crumble it into the pot. Add the meat mixture back into the pot, along with the chopped eggs, sausage, raisins, parsley, and olives and mix to combine.
  • Preheat the oven to 350 degrees F.
  • Transfer the stuffing to a buttered casserole dish and bake for 20 to 30 minutes until the top is nicely browned. Serve with roast turkey.

HOMEMADE CROCK POT STUFFING

Homemade Crock Pot Stuffing image

This recipe satisfies the most critical traditionalists! A bonus is the partial advance preparation.

Provided by Mrs H

Categories     Easy

Time 5h30m

Yield 12-15 serving(s)

Number Of Ingredients 12

1/4 cup butter
1 1/2 cups chopped celery
1 cup chopped onion
1 tablespoon sugar
2 teaspoons poultry seasoning (sage works as well)
1 teaspoon salt
1/2 teaspoon dried basil
1/2-3/4 teaspoon ground pepper
1/4 teaspoon nutmeg
1/4 teaspoon dried thyme
12 cups cubed white bread, toasted
2 cups chicken stock

Steps:

  • Melt butter.
  • Add celery&onion, saute till tender.
  • Stir in sugar through thyme.
  • (This can be set aside till you need it-refrigerate if overnight) In a large bowl combine your 'prepared ahead' bread cubes and vegetable mixture.
  • Pour in the chicken stock and toss lightly.
  • Spoon into 3-5 quart crock pot.
  • Cook on low 5-6 hours.
  • If it looks a little dry and hour before serving add more chicken broth or drippings if you have them.
  • Our family likes to add sliced hazelnuts and halved brazil nuts-stir them in (to taste) an hour before serving.

Tips:

  • Use a variety of breads: This will give your stuffing a more complex flavor and texture. Try using a combination of white, wheat, and cornbread.
  • Toast the bread before using it: This will help to dry it out and make it less likely to become soggy.
  • Sauté the vegetables before adding them to the stuffing: This will help to bring out their flavor and make them more tender.
  • Use a flavorful broth: The broth you use will add a lot of flavor to the stuffing, so choose one that you like. You can use chicken broth, vegetable broth, or even beef broth.
  • Season the stuffing well: Don't be afraid to add plenty of herbs and spices to your stuffing. This will help to give it a delicious flavor.
  • Don't overstuff the bird: If you overstuff the bird, the stuffing won't have enough room to cook properly and it may become dry and dense.
  • Let the stuffing rest before serving: This will help the flavors to meld and the stuffing to set.

Conclusion:

Making homemade stuffing is a great way to add a delicious and festive touch to your holiday meal. By following these tips, you can make a stuffing that is moist, flavorful, and perfectly cooked. So next time you're looking for a side dish that will impress your guests, give homemade stuffing a try.
