8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
½ cup grated Parmesan cheese
3 cups milk
¼ cup butter
2 ½ tablespoons all-purpose flour
2 tablespoons butter
½ cup bread crumbs
1 pinch paprika

Steps:

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

2 cups uncooked small pasta shells
20 uncooked jumbo pasta shells
2 tablespoons butter
1 package (16 ounces) Velveeta, cubed
2 cups shredded cheddar cheese
1 cup heavy whipping cream
3/4 cup grated Parmesan cheese, divided
1-1/4 cups 2% milk, divided
2 large eggs
2 cups panko bread crumbs
1/2 cup all-purpose flour
Oil for deep-fat frying

Steps:

  • Cook pastas separately according to package directions for al dente; drain. Meanwhile, in a large saucepan, melt butter over low heat. Add Velveeta, cheddar cheese, cream and 1/4 cup Parmesan cheese. Cook and stir over low heat until blended. Remove from heat., In another large saucepan, combine small pasta shells and half of the cheese mixture; set aside. For dipping sauce, stir 1 cup milk into remaining cheese mixture; keep warm., In a shallow bowl, whisk eggs with remaining milk. In another shallow bowl, mix bread crumbs with remaining Parmesan cheese. Place flour in a third shallow bowl. Fill each large shell with scant 1/4 cup pasta mixture. Dip in flour to coat all sides; shake off excess. Dip in egg mixture, then in bread crumb mixture, patting to help coating adhere., In an electric skillet or a deep fryer, heat oil to 375°. Fry shells, a few at a time, 1-2 minutes on each side or until dark golden brown. Drain on paper towels. Serve with dipping sauce.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cup heavy whipping cream (warmed)
1/2 cup half and half
1 cup freshly grated Cheddar cheese
4 slices American cheese ((such as Kraft Singles))
1 teaspoon hot sauce (optional)
½ teaspoon Kosher salt
½ teaspoon dry mustard powder

Steps:

  • In a large pot, bring pasta water to a boil and season heavily with salt. Add pasta and cook according to package directions. Drain well and set aside until ready to use.
  • In a medium-sized sauce-pan over medium heat, melt the butter and sprinkle over the flour. Whisk together and allow to cook for 2 minutes, taking care not to let it brown. 6 ounces large pasta shells
1 cup small pasta shells
1/2 cup cheese crackers, finely crushed

Steps:

  • Bring the half-and-half to a simmer in a large saucepan over medium heat. Whisk in the American cheese and cream cheese until smooth. Remove from the heat and whisk in the Cheddar, mustard, paprika, 1 teaspoon salt and several grinds of black pepper. Put 1/2 cup sauce each into 2 medium bowls. 2 cups of organic half and half, warmed
2 cups of a combination of shredded cheddar and gruyere cheeses
¼ teaspoon of smoked paprika
¼ teaspoon of garlic powder
¼ teaspoon of dry ground mustard
¼ teaspoon of turmeric
salt and pepper, to taste
3 cups of dry shell pasta

Steps:

  • Preheat the oven to 350 degrees.
  • In a large nonstick saucepan over medium heat, melt the butter. Add the flour, whisking constantly, until well incorporated, about 1-2 minutes. Remove from heat and gradually whisk in the warmed half and half. Stir until completely incorporated and slightly thickened, a few minutes.
