2 tablespoons butter
1 medium onion, chopped
6 medium potatoes, peeled and cubed
5 cups water
2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 teaspoon garlic salt
1/8 teaspoon pepper
12 ounces process cheese (Velveeta), cubed
Minced fresh parsley

Steps:

  • Melt butter in a Dutch oven over medium-high heat. Add onion; cook and stir until tender, 5 minutes. Add potatoes and water; bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 15 minutes. Stir in the milk, soup, garlic salt and pepper; heat until warmed through. Add cheese; stir until cheese is melted. Sprinkle with parsley.

Number Of Ingredients 6

6 peeled potatoes
1/2 cup butter
1/4 cup flour
3 cups milk
salt
pepper

Steps:

  • Start by boiling potatoes until fork tender.
  • When potatoes are done, strain out the water and add butter.
  • When butter is melted, add flour. Stir gently to make a paste between butter and flour. The paste will coat the potatoes.
  • Add Milk.
  • Gently stir. Allow the pot to boil. When it reaches boil, turn down to simmer.
  • Simmer on low till soup thickens.
  • Salt and Pepper to taste.

This is a real favorite in my house! It is easy to make and doesn't take very long to make. By no means is this a "Low-Calorie" soup, but it really sticks to your ribs and warms you up in cold weather!! Once you start to make this soup, it is ready to eat in about an hour!

Number Of Ingredients 10

5 or 6 slice bacon, diced into small pieces.
1/2 large sized onion, diced
1 rib celery, diced
3 large potatoes, peeled and cubed (cut into 1/2 inch cubes)
3 to 4 c water (add 3, but may need to add a bit more)
black pepper to taste (this shouldn't need added salt...)
3 c milk (more if you want to add more)
2/3 c all purpose flour (in a shaker with 1 cup of water, shaken well to make a thickening)
3 Tbsp butter (optional)
2 to 3 Tbsp granulated chicken bullion. i use knorr "calde de pollo", but the low sodium. it's better.

Steps:

  • 1. In a saucepan, cook bacon and add onion...Cook until browned, reserving drippings. Cut the heat and add diced celery. Set aside.
  • 2. In a large pot, add cubed potatoes and cover with the water. (Add more to completely cover the potatoes if needed.) Cook the potatoes until tender. Add bacon, onion & celery mixture. Be sure and add at least most of the bacon drippings too. (This is where a lot of the flavor is.) Stir together.
  • 3. When the liquid is hot, add the chicken bullion to make a light but savory chicken broth. Add milk and butter. Heat to just under boiling temperature and add the flour & water mixture and whisk in to thicken the soup. Thicken it to as thin or as thick as you like. Add pepper to taste. This shouldn't need any salt... add if needed.
  • 4. Reduce heat to low and let simmer for about 15 minutes and thin with a little more milk or water if it gets too thick. Serve hot with crackers. (Garnish with some 'real bacon bits', shredded cheese and chopped green onion tops sprinkled on top of each bowl - OPTIONAL)

GRANDMA'S HOMEMADE POTATO SOUP RECIPE

2 pounds of russet potatoes, peeled and cut into large chunks (about 1-1/2 inch)
1/2 cup of chopped onion
3 tablespoons of all purpose flour
Kosher salt and freshly cracked black pepper, to taste
1/4 to 1/2 cup (1/2 to 1 stick) of salted butter
Water to cover
1 (12 ounce) can of evaporated milk
Shredded cheese, for garnish, optional

Steps:

  • Toss the potatoes with the onion, flour and salt and pepper; set aside for about 10 minutes. Meanwhile melt the butter in a Dutch oven or soup pot. Add the potato mixture to the pot; stir to coat. Add enough water to cover the potatoes and bring to a boil; stir in the milk, reduce to a simmer, and cook, uncovered, stirring occasionally about 25 to 30 minutes, or until potatoes are tender. Taste, adjust salt and pepper, and continue cooking on simmer, uncovered, until the soup reach desired consistency and thickness. Garnish each serving with shredded cheese if you like and serve immediately. Cook's Notes: May also substitute green onion. Use an immersion blender or potato masher to puree the potatoes, if a less chunky texture is desired. Variation: Brown several slices of bacon, set aside and crumble. Add one stalk of celery, chopped, and saute the veggies in the pan drippings. Add the potato mixture and proceed with the recipe. Garnish with crumbled bacon. Cheesy Ham and Potato Soup: Add in 2 cups of smoked ham, cubed with the potatoes. Just before serving, stir in 1-1/2 cups of shredded cheddar cheese, just until melted.

1 c chopped chicken
4-5 medium potatoes, peeled and diced
salt and pepper to taste
2 Tbsp oil for browning
2 c broth (canned, packaged or homemade)
1/2 c milk or cream as you like it

Steps:

  • 1. Place oil in your favorite warmed stockpot, add in chopped onions, chopped celery, chopped carrots and brown lightly until onions are translucent.
  • 2. Add your favorite stock (packaged or homemade) and then add your diced potatoes and bring to a boil.
  • 3. Reduce to a lower heat and simmer for about 40 minutes, or until the potatoes are soft and the soup is to the consistency that you like it.
  • 4. Now season to taste. During the final minutes of cooking, add 1/4 to 1/2 cup milk or cream, depending on the consistency that you like for your soup.
  • 5. Serve with your favorite bread or crackers. Curl up in front of the TV and enjoy!

3 medium carrots, chopped
2 stalk(s) celery, diced
2 c chicken broth
1/3 c butter
1/3 c flour
2 1/2 c 2% milk
2 c heavy cream
salt & pepper to taste
real bacon bits and shredded cheddar for garnish

Steps:

  • 1. In a large stockpot, combine chicken broth, and all vegetables, season with salt and pepper to taste.
  • 2. Bring to a boil, cover and cook on medium high for 15-20 minutes, till veggies are soft.
  • 3. Meanwhile, while the veggies are cooking In a medium saucepot, melt butter over medium heat, add flour, whisking constantly, cook for about 30 seconds, slowly stir in milk, and cook till bubbly and thickened.
  • 4. Once veggies are done, add milk mixture and stir. Add Heavy cream and combine as well.

2 onions, chopped
1 carrot, peeled and diced
3 stalks celery, diced
1 tablespoon oil-packed minced garlic
4 cubes chicken bouillon
1 quart water
1 tablespoon parsley flakes
1 tablespoon salt-free herb seasoning blend
1 tablespoon Italian seasoning
1 ½ cups soy milk
2 cups chopped broccoli

Steps:

  • In a slow cooker, place the potatoes, onions, carrot, celery, oil-packed garlic, and bouillon cubes. Pour in the water, and season with parsley, herb seasoning blend, and Italian seasoning.
  • Cover slow cooker, and cook soup 3 to 4 hours on High, or 10 to 12 hours on Low. Stir in soy milk during the final 30 minutes of cook time.
  • Place broccoli over boiling water in a pot fitted with a steamer basket, and steam 5 minutes, or until tender but firm. Spoon into the soup to serve.
