This pizza is in the light-handed California style, with no tomato sauce. If you prepare the dough in advance (it takes only 20 minutes or so, and can be refrigerated for several days), putting a pizza or two together for dinner is actually a breeze, arguably easier than making a pasta. Omit the sausage for a vegetarian version.

6 cups thinly sliced bell pepper or other sweet pepper
2 cups thinly sliced red onion
1 jalapeño pepper, thinly sliced
2 garlic cloves, minced
3 tablespoons olive oil
Salt
4 balls of pizza dough, ready to stretch and bake (see recipe)
All-purpose flour, for dusting
8 ounces/225 grams low-moisture mozzarella or Fontina, grated
1 pound/450 grams fresh mozzarella
8 ounces/225 grams Italian fennel sausage (2 sausages in casings), cut into 1/2-inch pieces (optional)
1 tablespoon chopped fresh marjoram
Basil leaves, for garnish

Steps:

  • Prepare the pepper mixture: Place peppers, onion, jalapeño, garlic and oil in a mixing bowl. Season well with salt and toss to distribute seasoning, then set aside.
  • Heat oven to 500 degrees and place a baking stone or heavy baking sheet on middle rack.
  • Shape the dough: Pat 1 dough ball to a flat disc, lightly dust both sides with flour and stretch by hand to a 10-inch diameter. Alternatively, lightly dust dough with flour and roll out with a pin. Place dough circle on a parchment-lined rimless baking sheet (or use a rimmed baking sheet turned upside down, or a pizza peel).
  • Sprinkle each pizza evenly with 2 ounces of grated cheese, leaving a 1/2-inch border. Top each with 4 ounces sliced fresh mozzarella. Arrange the pepper mixture over the cheeses and dot each pizza with 2 ounces of sausage meat in very small pieces. Sprinkle with a pinch of marjoram.
  • To bake, quickly slip the pizza, still on the parchment, onto the baking stone. Bake for 5 to 7 minutes, until dough is well browned and pepper mixture is slightly charred in spots. Use a large spatula to remove pizza from oven, discard parchment and place on a large cutting board. Garnish with basil leaves and cut into slices.

¾ tsp. salt
3 tbs. olive oil
½ cup water
½ cup milk
for the sauce:
3 long hot italian peppers - remove seeds and slice
3 red bell peppers - sliced
4 cloves of garlic - chopped
1 sweet onion - sliced
2 cups dried apricots - chopped
28 oz. can of crushed tomatoes
¼ cup red wine
½ cup fresh basil - chopped
½ tsp. red pepper flakes
1 tsp. salt
1 tsp. dried oregano
2 tablespoons olive oil
8 oz. shredded mozzarella or your favorite shredded cheese
romano or parmesan cheese - for grating
cornmeal
more olive oil (for drizzling)

Steps:

  • 1. Dough: Combine the flour, baking powder and salt. Make a well add the water and olive oil. Stir with a fork. Make another well and slowly add the milk; stirring with a fork. If dough is too dry add a touch more water. Try to get it just right. Form into ball. Dust a little flour on a clean surface and knead the dough for 3-4 minutes. Dough should feel soft and springy. Gently roll out the dough.
  • 2. For the Sauce: Heat a cast iron frying pan with the olive oil. Add the sliced peppers, onions, garlic and apricots. Sauté until the onions are clear and the peppers become slightly charred and soften. Add the crushed tomatoes, wine and seasonings. Simmer the sauce on low while preparing the dough. Dust the pizza pan with cornmeal. Roll out the dough to loosely fit the pizza pan. Top with the sauce, shredded cheese, grated cheese and a tablespoon or two of olive oil.

So I grew up in Cincinnati. 18 years of Cincy Chili, Ribs, Ice Cream, and, of course, LaRosa's Pizza, whose sauce is flavorful and SWEET. Now that I've been away, I find you can't get any pizza remotely close ANYwhere else. Now this is no copycat recipe, but it captures the spirit of Buddy L's pizza sauce. It complements vegetable toppings as well as meats... My wife and I have not ordered pizza out since this sauce was concocted... I HIGHLY recommend using caetb's pizza dough with this sauce. (Recipe #38512 - the one with the wine...) I put the ingredients in the bread machine and it turns out great every time. I cook the finished pizza between 400 and 425 degrees fahrenheit for 9-12 minutes on a normal cookie sheet, or 11-15 minutes on an "air cookie sheet." (My wife and I prefer the normal cookie sheet, so the crust cooks and the cheese doesn't burn...) I'd love to hear feedback from others, especially misplaced Cincinnati Folks - let me know your thoughts! Mike's Notes: Since I concocted and posted this recipe, I have been back to Cincinnati... Needless to say, when I had the "real thing," I was mildly disappointed! Doh! I'm thinking about decreasing the "sweet" contents by 1/2 tbsp each on the honey and brown sugar - it IS awfully sweet! 1 (28 ounce) can tomato puree
1 teaspoon dried onion, minced or chopped
