Yield 64

Number Of Ingredients 3

8 cups peeled, cored and chopped pears
1 cup unsweetened pineapple juice
8 cups white sugar

Steps:

  • Place chopped pears into a large pot, and pour pineapple juice over them to prevent them from browning. Stir in sugar, and bring to a boil over medium-high heat. Stir frequently to prevent scorching. When the pears are at a full boil, reduce heat to medium, and cook until the mixture is the color and texture of honey. The longer you cook it, the thicker it gets. Cooking time is usually 2 to 3 hours.
  • Ladle into hot sterile jars, filling to within 1/4 inch of the top. Wipe rims with a clean damp cloth, and seal jars with lids and rings. Process in a boiling water canner for 10 minutes, or the amount of time recommended by your local extension for your area.

1 box SURE-JELL Fruit Pectin
5 cups sugar, measured into separate bowl (see tip below)

Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Tips:

  • Choose ripe and aromatic pears: The quality of pears used in the recipe greatly influences the final flavor of the pear honey. Opt for ripe and fragrant pears to ensure a rich and flavorful outcome.
  • Use a variety of pears: Experiment with different pear varieties to create unique flavor combinations. For example, try a blend of sweet and tart pears, or a mix of soft and crunchy varieties.
  • Simmer gently: Patience is key when making pear honey. Simmer the pears over low heat, allowing the flavors to develop and concentrate gradually.
  • Do not overcook: Keep a close eye on the pears during cooking to prevent overcooking. Overcooked pears can lose their vibrant color and flavor.
  • Strain carefully: Once the pears have softened, strain the mixture through a fine-mesh sieve to remove any remaining solids. This will result in a smooth and velvety pear honey.
  • Add honey or sweetener: If desired, you can add honey or another sweetener to the pear honey for extra sweetness. Start with a small amount and adjust to your taste preference.
  • Experiment with spices: Feel free to incorporate spices like cinnamon, nutmeg, or ginger into the pear honey for a warm and aromatic flavor profile.
  • Store properly: Once prepared, store the pear honey in a clean and airtight container in the refrigerator. It can be kept for up to 2 weeks.

Conclusion:

Homemade pear honey is a versatile and delicious condiment that can elevate various culinary creations. Its rich flavor and natural sweetness make it an excellent topping for pancakes, waffles, and yogurt. It also pairs wonderfully with cheese, crackers, and charcuterie boards. The versatility of pear honey extends to savory dishes as well; it can be incorporated into marinades, glazes, and sauces to add a touch of sweetness and complexity. With its ease of preparation and endless possibilities for culinary exploration, homemade pear honey is a must-try for food enthusiasts and home cooks alike.
