EASY HOMEMADE PEACH JAM RECIPE (NO PECTIN)

Easy Homemade Peach Jam Recipe (No Pectin) image

This yummy, no pectin, Peach Jam Recipe is easy to make and sooo delicious!

Provided by Jamie sanders

Number Of Ingredients 3

3 1/2 pounds peaches (1 lb = 3 to 4 medium peaches), peeled, pitted, and cut into chunks
2 1/2 cups sugar (remember, you can start with less sugar and add more if needed, but don't add too little or your jam won't gel.)
Juice from one lemon (Lemon juice is naturally high in pectin and will help the jam set.)

Steps:

  • Add peaches and lemon juice to medium saucepan. Bring to boil over med-high heat, using a spatula or masher to crush peaches to desired consistency.
  • Reduce heat to medium. Add sugar. Bring peaches back to a boil, stirring frequently.
  • Continue to boil and stir, until peaches reduce and reach desired consistency. (Anywhere from 15 to 25 minutes - jam should stick to spoon when lifted and turned sideways.)
  • Let the peach preserves cool, if you find the jam is not at the consistency you desire, you can bring the peaches back to boiling for about 10 minutes and then let it cool again.

PEACH JAM

Peach Jam image

There are many different varieties of peach, but the main distinction is between clingstone and freestone. You can use either for this recipe: The peaches will cook down into jam, so how well you cut the fruit or separate it from the pit isn't a concern. To boost the citrusy tartness, try adding a few strips of lemon peel (discard them when you take out the cloves).

Provided by Food Network Kitchen

Time 35m

Yield 2 cups

Number Of Ingredients 5

1 cup sugar
2 tablespoons plus 2 teaspoons fresh lemon juice
1/4 teaspoon vanilla extract
2 cloves
4 large ripe peaches, peeled, pitted and coarsely chopped (about 2 pounds)

Steps:

  • Put the sugar, 2 tablespoons of the lemon juice, vanilla and cloves in a heavy, nonreactive skillet. Cook over medium heat, stirring occasionally, until the sugar dissolves, about 5 minutes.
  • Add the peaches to the skillet and stir once to coat. Raise the heat to medium-high, and bring to a visible simmer. Cook, stirring occasionally, until the mixture is thick and jam-like and the peach pieces are very soft, 15 to 20 minutes, depending on ripeness of the peaches. Check the pan midway, you may need to lower the temperature to medium if the mixture starts to brown.
  • Crush the peaches with a potato masher, until most of the mixture is smooth and there are only a few chunky pieces left. (The longer the mixture cooks, the thicker the jam will be after it cools.) Remove from the heat, stir in the remaining 2 teaspoons of lemon juice, and let cool before refrigerating. Cool completely in the refrigerator before using. Discard the cloves before serving. The jam will keep in the refrigerator for up to 2 weeks.

Tips:

  • Select ripe, flavorful peaches: Choose peaches that are soft and have a sweet aroma. Avoid peaches that are bruised or have brown spots.
  • Peel and pit the peaches: Use a sharp knife to peel the peaches. Then, cut the peaches in half and remove the pits.
  • Mash the peaches: Use a potato masher or a food processor to mash the peaches until they are smooth.
  • Add sugar and lemon juice: Stir in the sugar and lemon juice to the mashed peaches. The amount of sugar you add will depend on how sweet you want the jam to be.
  • Bring the mixture to a boil: Place the pot over medium heat and bring the mixture to a boil. Stir the mixture constantly to prevent it from sticking to the bottom of the pot.
  • Reduce the heat and simmer: Once the mixture has come to a boil, reduce the heat to low and simmer for 30 minutes. Stir the mixture occasionally to prevent it from sticking.
  • Test the jam for thickness: After 30 minutes, test the jam for thickness. To do this, place a small amount of jam on a cold plate. If the jam wrinkles when you push your finger through it, it is ready. If the jam is still too thin, continue to simmer it for a few more minutes.
  • Can the jam: Once the jam is ready, it can be canned for storage. To can the jam, sterilize jars and lids by boiling them in water for 10 minutes. Then, fill the jars with the hot jam and seal them tightly.

Homemade peach jam is a delicious and versatile condiment that can be enjoyed on toast, pancakes, waffles, or ice cream. It can also be used as a filling for pies, tarts, and pastries. With a little time and effort, you can make your own homemade peach jam that is sure to be a hit with your family and friends.
