This spice blend is PERFECT to use when your recipe calls for 'Old Bay Seasoning', but you don't have any! I've used this many times and I love it! These are ingredients that you probably already have in your spice cabinet!

1 Tbsp celery salt
1 Tbsp ground bay leaves
2 tsp fresh ground black pepper
1 tsp paprika
1/2 tsp dry mustard
1/4 tsp nutmeg-fresh ground if possible
1/4 tsp cinnamon powder
1/4 tsp ground cloves
UPDATE i recently did a side by side taste test of this recipe with a container of old bay..
and based on that test
i would use only a pinch of the nutmeg,
cinnamon and cloves,
instead of 1/4 tsp. of each

Steps:

  • 1. Mix all ingredients together and use in place of 'Old Bay Seasoning' in any recipe!
  • 2. Store leftover spice blend in an airtight container.

SPICES THAT REQUIRE GRINDING
1 Tbsp dried bay leaves, finely ground
1 Tbsp celery seeds, ground
1/4 tsp red pepper flakes
THE REMAINDER OF THE SPICES
1 1/2 tsp dry mustard, i prefer coleman's
1 tsp black pepper, freshly ground
1 tsp white pepper, freshly ground
1 tsp paprika, smoked variety
1 tsp celery salt
1/2 tsp ground ginger
1/4 tsp nutmeg, freshly grated
1/8 tsp ground cloves
1/8 tsp ground allspice
1/8 tsp cayenne pepper, or to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. Grind the top three spices, and then combine them with the others.
  • 4. Store in a glass jar in a cool dry place.
  • 5. PLATE/PRESENT
  • 6. Use in any recipe that calls for Old Bay seasoning. Enjoy.
