HOMEMADE HAMBURGER HELPER
Think of this as the most luxurious Hamburger Helper you've ever had. It's how Mark Rosati, the culinary director of Shake Shack, turns leftover ground beef into a complete weeknight dinner. The entire dish - even the pasta - is made in one pot, and melds the indelible comfort of macaroni and cheese with the complexity of a good Bolognese. This definitely has a kick, so adjust the hot sauce according to taste.

Steps:
- Heat a large (12-inch) sauté pan or Dutch oven over medium-low heat, and add oil and onion; season lightly with salt and pepper. (The hot sauce added in Step 6 will add a lot of flavor, so be careful not to overseason here.) Let cook until the onions turn light beige in color and begin to caramelize, 20 to 25 minutes.
- Add garlic, and cook until fragrant and starting to brown ever so slightly, about 2 minutes.
- Increase heat to medium-high and add bacon and ground beef, using the back of a large spoon to break up the meat into smaller pieces. Continue to cook until the liquid has mostly evaporated and the meat starts to sear and develop a crust on the bottom of the pan, 12 to 15 minutes.
- Remove pan from the heat and carefully drain off most of the fat, leaving a little in the pan to keep the meat moist.
- Return pan to the medium-high heat and add white wine, allowing it to reduce until the mixture is almost dry, about 10 minutes.
- Add the chicken stock, heavy cream, hot sauce, paprika and bay leaf to the pan. Mix until combined and bring to a boil over medium-high.
- Once the mixture is boiling, add the pasta and cook until al dente, stirring often, about 9 minutes.
- Reduce the heat to low and stir in both types of cheese, stirring until completely melted and sauce is thickened.
- Remove the pan from heat, stir in chives and season to taste with salt and pepper. Serve immediately.
SPICY HOMEMADE HAMBURGER HELPER
I developed this recipe because I wanted something that had a spicier flavour than instant products readily available in your local grocery store but I wanted the ease with which to make it too. I think this recipe is easy to follow and versatile too. You can add any vegetable that you may have in the house and adjust the spices to suit yourself. You can change the type of pasta/sauce used too. Everytime you make it, it can be different from the last time! You can even make it using ground chicken, turkey, or even seafood (or with no meat at all!) Enjoy!

Steps:
- Brown ground beef in a large skillet; drain. Add hot water, milk, pasta and your homemade sauce packet (corn starch, chili powder, garlic powder, salt, sugar, and paprika). Bring to a boil. Cover and simmer on low about 12 minutes, stirring occasionally, until pasta is tender. In the last few minutes of cook time, stir in the cheese; cover the pot again for the final few minutes of cook time. When the pasta is tender and the cheese is melted, turn off heat and uncover. Let mixture stand, uncovered, about five minutes. It will continue to thicken as it stands.
Tips:
- Use lean ground beef: This will help reduce the amount of grease in the dish.
- Brown the beef and vegetables thoroughly: This will help develop flavor and prevent the dish from being bland.
- Use a variety of vegetables: This will add flavor, color, and nutrients to the dish.
- Don't overcook the pasta: It should be cooked al dente, or slightly firm to the bite.
- Add cheese and seasonings to taste: This will help customize the dish to your liking.
Conclusion:
Hamburger Helper is a quick and easy meal that can be made with a variety of ingredients. It's a great option for busy weeknights or when you're short on time. With a few simple tips, you can make a delicious and satisfying Hamburger Helper that your whole family will enjoy.
