GUINNESS MUSTARD
This comes from the March 2008 edition of bon appetit magazine. DH really liked this mustard on sandwiches. It needs to be refrigerated. The 2 hour cook time is the refrigeration time before use. Other stouts would work in place of the Guinness.

Tips:
- Use high-quality ingredients: Start with fresh, flavorful ingredients to create a delicious mustard. Choose a good-quality stout, such as Guinness, and use whole grain mustard seeds for a more robust flavor.
- Toast the mustard seeds: Toasting the mustard seeds will help to bring out their flavor and aroma. You can do this in a dry skillet over medium heat for a few minutes, stirring constantly.
- Grind the mustard seeds: You can use a mortar and pestle or a spice grinder to grind the mustard seeds. Grind them to a fine powder for a smooth mustard or a coarser grind for a more textured mustard.
- Use a double boiler: Using a double boiler will help to prevent the mustard from curdling. Place a heatproof bowl over a saucepan filled with simmering water and whisk the mustard ingredients together in the bowl.
- Season to taste: Add salt, pepper, and other spices to taste. You can also add a bit of honey or maple syrup for sweetness or a splash of vinegar for tartness.
Conclusion:
Homemade Guinness mustard is a delicious and versatile condiment that can be used on sandwiches, burgers, hot dogs, and more. It's also a great addition to cheese plates and charcuterie boards. With a few simple ingredients and a little bit of time, you can easily make your own Guinness mustard at home. So next time you're looking for a new condiment to try, give this recipe a try.
