Time 50m

Yield 100 crackers, 10 serving(s)

Number Of Ingredients 5

1 cup all-purpose flour
4 tablespoons cold unsalted butter, cut into small pieces
8 ounces cheddar cheese
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Pulse the flour, butter, cheese, salt, and pepper together using a food processor until the mixture resembles coarse meal.
  • Pulse in 3 to 4 tablespoons of water, one tablespoon at a time, and only enough so that the dough forms a ball and rides the blade.
  • Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours.
  • Roll the dough out on a cookie sheet to 1/8-inch thickness. (If you roll it thicker, it will still work, but the crackers won't be quite as crunchy.).
  • Using a pizza cutter slice dough into 1 inch squares or using a cookie cutter cut out as many crackers as possible.
  • Bake at 350 F until golden and crisp - 15 to 20 minutes.

Time 30m

Yield 2 1/2 quarts, 10 serving(s)

Number Of Ingredients 7

18 ounces cheddar cheese goldfish crackers
1 ounce ranch dressing mix
3 teaspoons dill weed
1/2 teaspoon garlic powder
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon cayenne pepper
2/3 cup vegetable oil

Steps:

  • Place crackers in a large bowl.
  • Combine the remaining ingredients.
  • Drizzle over crackers and toss to coat evenly.
  • Transfer to a large baking pan.
  • Bake at 250 degrees for about 15 - 20 minutes stirring occasionally.
  • Cool completely and store in an airtight container.

Tips:

  • Make sure to use cold butter and grated cheese, as this will help the crackers stay crispy.
  • Don't overmix the dough, as this will make the crackers tough.
  • Roll the dough out thinly, about 1/8 inch thick, to ensure that the crackers are crispy.
  • Use a sharp knife or pizza cutter to cut the dough into shapes, as this will help prevent the crackers from tearing.
  • Bake the crackers in a preheated oven until they are golden brown, about 10-12 minutes.
  • Let the crackers cool completely before storing them in an airtight container.
