Provided by Micah A Leal

Time 1h40m

Number Of Ingredients 11

4 pounds medium peaches, peeled and sliced 1/2-inch thick
1 teaspoon vanilla extract
2/3 cup granulated sugar
1 tablespoon cornstarch
1 cup and 2 tablespoons all-purpose flour, divided
2 cups old-fashioned oats
3/4 cup dark brown sugar
1 1/2 tablespoons cinnamon
1 teaspoon kosher salt
1 cup unsalted butter, cut into 1/2-inch cubes
1/2 cup chopped pecans, optional

Steps:

  • Place peach slices in a large mixing bowl and toss to coat in the vanilla extract. In a separate bowl, whisk together sugar, cornstarch, and 2 tablespoons all-purpose flour. Dump sugar mixture onto peaches, and toss the peaches until they are evenly coated. Set aside for 30 minutes.
  • In the bowl of a stand mixer, combine remaining 1 cup flour, oats, brown sugar, cinnamon, and salt. Mix to combine. With the mixer on low, add one cube of butter at a time, waiting until it is incorporated before adding the next. Continue until all of the butter is used. Add pecans and mix until evenly incorporated.
  • Preheat oven to 350°F. Grease a glass 9- x- 13-inch baking dish with cooking spray. Spread peaches evenly inside the dish. Sprinkle oat mixture on top of the peaches, making an even layer. Bake until the peach liquid is bubbling and the surface has browned, about 1 hour. Allow to cool slightly before serving with vanilla ice cream, if desired.

FRESH PEACH CRISP

Fresh Peach Crisp image

I read the suggestions and comments in the reviews when I tried this recipe that I adopted from the RecipeZaar account in February 2005. Instead of all the flour, sugar, and cinnamon going into the topping, I increased the amounts of each and mixed some with the peaches. (Originally the recipe called for 1 cup each flour and (white) sugar and only 1/2 teaspoons cinnamon. I like cinnamon.) The result was a dessert with a nice consistency, not runny, and with the sweetness distributed throughout, not just in the topping. This fruity dessert is great served warm with vanilla ice cream.

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 6

6 cups fresh peaches, peeled, sliced fresh
2 teaspoons cinnamon, ground (divided)
1 1/2 cups all-purpose flour (divided)
1/4 teaspoon salt
1 1/2 cups light brown sugar, firmly packed (divided)
1/2 cup butter, softened

Steps:

  • Place sliced peaches in a mixing bowl.
  • Mix together 1/2 cup of the flour, 1/2 cup of the brown sugar, and 1 teaspoon of the cinnamon, then mix well with sliced peaches in bowl.
  • Place peach mixture in the bottom of a lightly buttered 9 x 13 inch baking dish; set aside.
  • Combine remaining flour, sugar, and cinnamon with the salt in a medium mixing bowl; cut in butter with a pastry blender until mixture resembles coarse meal.
  • Sprinkle mixture evenly over peaches in dish.
  • Bake in a preheated 375 degree (Fahrenheit) oven for 45 minutes or until golden brown.
  • Spoon into individual serving bowls; serve warm with whipped cream or vanilla ice cream.

Tips:

  • Choose ripe peaches: Use ripe, juicy peaches for the best flavor. Peaches that are too firm will not soften properly in the crisp.
  • Peel the peaches: Peeling the peaches is optional, but it will give the crisp a smoother texture. To peel the peaches, simply use a sharp knife to score an X in the bottom of each peach. Then, place the peaches in a bowl of boiling water for 1-2 minutes, or until the skins start to loosen. Remove the peaches from the water and rinse them with cold water. The skins should now slip off easily.
  • Use a variety of spices: Don't be afraid to experiment with different spices in your crisp. Some popular options include cinnamon, nutmeg, ginger, and cardamom. You can also add a pinch of salt to help balance out the sweetness of the peaches.
  • Don't overcook the crisp: The crisp is done when the topping is golden brown and the peaches are bubbling. Overcooking will make the crisp dry and tough.

Conclusion:

Peach crisp is a classic summer dessert that is easy to make and always a crowd-pleaser. With its sweet, juicy peaches and crispy, buttery topping, it's the perfect way to end a summer meal. So next time you have a batch of ripe peaches, be sure to give this recipe a try!
