CILANTRO BLACK BEAN BURGERS



Cilantro Black Bean Burgers image

These are healthy and tasty vegetarian burgers great as a meatless entree. Serve as you like any burger topped or try them with no buns and guacamole or a spicy sriracha sauce.

Number Of Ingredients 11

2- 14.5 oz. cans black beans, rinsed and drained
1/4 cup cilantro leaves, packed
1 lime, juiced (about 1 oz.)
1 Tbsp. dried minced onion, hydrated
1/2 tsp ground cumin
3/4 tsp sea salt
1/2 tsp ground black pepper
1 Tbsp olive oil
1 large egg
1/4 cup plus 1-2 Tbsp cornmeal, divided
olive oil spray for griddle or skillet

Steps:

  • Place black beans through olive oil in a food processor and process or pulse for about 30 seconds.
  • Once ingredients fully processed and your mixture is a smooth thick pasty texture go ahead and add your egg and 1/4 cup cornmeal.
  • Pulse a few more times to fully mix and then transfer your mixture to a medium size mixing bowl.
  • Place your bowl, covered with plastic wrap or foil into a freezer for 15 minutes or fridge for about 30 minutes. (You're just wanting to give your mixture a nice chill so that they form better patties for you)
  • At this point start preheating your griddle or skillet when it's close to the end of the chilling time. (If you're using a griddle, preheat it to 400 degrees, if using a skillet to cook the burgers, preheat on medium to medium high.
  • Once your mixture is chilled for the allotted time, scoop a 1/2 cup measurement of your mixture and form a patty one by one as thick as you like and sprinkle the remaining cornmeal onto the top and bottom of your patty, then gently place the patty onto your olive oil sprayed and preheated cooking surface. Repeat this step till all of your mixture is gone.
  • Cook your burgers for about 5 minutes on one side or lightly browned and then gently flip over and cook another 5 minutes. You can be the best judge on brownness level desired.
  • If you want to melt cheese on top doing it after half way through the final flip is the best time.
  • Once the burgers are all cooked you may dress your burgers immediately and enjoy.

2 cans black beans
1 jalapeño (seeds removed for less spice)
1/4 of small red onion
1/2 cup corn kernels
2 garlic cloves
1/3 cup cilantro
1 - 2 tsp cumin
1 tsp chili powder
¼ -1/2 tsp red pepper flakes
Juice of 1/2 lime
2/3 cup bread crumbs (more if mixture is too thin) (whole wheat or gluten free, panko crumbs will work as well)
1 egg or flax egg
½ tsp cracked pepper
½ tsp sea salt

Steps:

  • In a food processor, process the jalapeño, onion, and garlic until finely ground. (You can finely dice them instead if desired!)
  • Add in one can or two cups of black beans, cilantro, lime juice and spices. Pulse until combined (there should still be chunks of black beans.)
  • Transfer the mixture to a medium sized mixing bowl.
  • Add in the rest of the black beans, egg or flax egg, bread crumbs, and corn and stir until combined.
  • Form into burger sized patties. (Sometimes I freeze this for about 15 minutes or so to help them form better into burgers.)
  • Grill over medium heat for about 4 minutes on each side.
  • You can also cook these in a frying pan over medium heat until browned on each side. Refrigerate leftovers for 5 days or freeze for about 2 months.

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 jalapeno pepper, seeded and minced
1 teaspoon dried oregano
½ red bell pepper, diced
1 ear corn, kernels cut from cob
1 (15 ounce) can black beans, drained and rinsed
½ cup plain bread crumbs
4 teaspoons chili powder
1 tablespoon minced fresh cilantro
½ teaspoon ground cumin
½ teaspoon salt
½ cup all-purpose flour, or as needed
1 tablespoon olive oil, or as needed

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion, garlic, jalapeno pepper, and oregano until onions are translucent, 8 to 10 minutes. Cook and stir red bell pepper and corn into onion mixture until red bell pepper is tender, 2 to 4 more minutes.
  • Mash black beans in a large bowl. Stir vegetable mixture, bread crumbs, chili powder, cilantro, cumin, and salt into mashed black beans. Divide mixture into 4 patties and coat both sides of each patty with flour.
  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook patties until browned, 5 to 8 minutes on each side.
