Time 1h35m

Yield 20 small truffles

Number Of Ingredients 7

1/2 cup heavy cream
1 vanilla bean
4 1/2 ounces dark chocolate (70-percent cacao)
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
2 cups puffed rice cereal, such as Rice Krispies
1/2 cup finely chopped hazelnuts
1 teaspoon finely grated orange zest

Steps:

  • Add the heavy cream to a small saucepan. Use a paring knife to split the vanilla bean lengthwise. Scrape the vanilla beans seeds from the pod and add to the cream along with the empty pod. Heat over low until just starting to simmer.
  • Meanwhile, use a serrated knife to finely chop the chocolate and put in a heatproof bowl.
  • Remove the vanilla pod, squeezing it to release any cream. Discard or reserve for another use.
  • Pour 1/3 cup of the hot vanilla cream over the chocolate (measure, as some cream will have evaporated) and use a rubber spatula to stir in small, circular motions until combined. Add the butter and continue to make circular motions until the mixture is completely melted and combined with no bits or streaks of butter. Stir in 1 cup of the puffed cereal, the hazelnuts and orange zest. Cover the bowl with plastic wrap and refrigerate the ganache for 1 hour to firm up.
  • Put the remaining 1 cup cereal in a resealable plastic bag and crush with a rolling pin or the back of a pot. Transfer to a shallow bowl.
  • Line a sheet pan with parchment. Use a tablespoon to scoop the ganache and roll it into a ball with both hands. Dip the ball in the crushed cereal to coat. Transfer the truffle to the prepared pan. Repeat with the remaining ganache and cereal. Put the truffles in mini muffin liners, if you like.
  • Store the truffles in an airtight container in the refrigerator for up to 2 weeks, or at room temperature for up to 4 days.

This delicious truffles are great & comforting but specially very easy to make. My grandmother thought me how to prepare them when I was still a girl and began to be interested in cooking, so she showed me some simple but great recipes, this is one of them. Time 20m

Yield 25-30 truffels

Number Of Ingredients 9

30 vanilla wafer cookies (a tube of)
1 (397 ml) can condensed milk
3 tablespoons cocoa powder
1 tablespoon unsalted butter or 1 tablespoon margarine, melted
2 -3 drops almond extract
2 -3 drops vanilla extract
1 teaspoon Amaretto (optional) or 1 teaspoon vanilla liqueur (optional)
peanuts (optional) or any kind nuts (optional)
chopped nuts (optional) or chocolate, snow to cover them (optional)

Steps:

  • Pulverize the cookies completely.
  • Put the cookie powder in a bowl and add the rest of the ingredients, except the ingredients to cover them.
  • Mix well, until it becomes a chocolate mixture.
  • Refrigerate, covered for a few hours at least or like I do, make them on the evening and let them in the fridge overnight. This hardens the mixture and makes it easy to handle.
  • When ready to make, wet your hands just enough to work with the paste and make small balls until finished.
  • If you like you can put an almond or a nut inside each truffle.
  • Now you can cover them with nuts, or chocolate, or colorful thingies :), or just leave them like that.
  • You can keep them in the fridge in a covered container for several days, but they also hold well unfridge if eaten within 1 or 2 days :).

Time 25m

Yield 12 large truffles or 24 small

Number Of Ingredients 4

1/2 pound semisweet chocolate, finely chopped
1/2 cup heavy cream
1 to 2 tablespoons dark rum, Grand Marnier, Bourbon, or other liquor
1/4 to 1/2 cup unsweetened cocoa, confectioners' sugar, sweetened ground chocolate, or finely chopped nuts

Steps:

  • Put the chocolate in a bowl. In a small saucepan or microwave, heat the cream to a boil. Pour the cream over the chocolate and shake the bowl gently to settle the cream. Cover with a plate or lid and set aside until the chocolate melts, about 5 minutes. Whisk the mixture until smooth and shiny. Stir in the rum or other flavoring. Cover the surface of the chocolate with plastic wrap. Set aside in a cool place until the chocolate firms up, about 2 hours. (To speed this up set the bowl of chocolate over another bowl of ice and stir until the desired consistency.)
  • Line a baking sheet with waxed or parchment paper. Use 2 spoons to drop small mounds/balls of chocolate, about 1/2 to 1-inch high on the paper (depending on the size you want). Then chill your hands under a faucet of running cold water or by using an ice bath. Roll each chocolate mound between your open palms to make smooth round balls.
  • Pour the cocoa or coating of choice into a cake pan or on a plate. Roll the truffles in the coating or use a clean spoon to pour the coating on the truffles. Repeat with all the truffles. Refrigerate until ready to serve.
  • To serve, scoop the truffles out of the cocoa with a fork or a slotted spoon. Put the truffles in small candy cups and serve now or refrigerate until ready to serve.

DARK CHOCOLATE TRUFFLES

Time 3h40m

Yield 15 to 20 candies, depending on size

Number Of Ingredients 4

1/2 cup heavy cream
8 ounces good-quality (70 percent) bittersweet chocolate, finely chopped
1 teaspoon pure vanilla extract
1 cup cocoa powder, for dusting

Steps:

  • In a saucepan, bring the cream just to a simmer over medium-low to low heat. Pour the cream over the chocolate in a bowl and cover with plastic wrap. Let stand about 10 minutes to melt the chocolate.
  • Add the vanilla and stir until smooth. Set aside to cool to room temperature, 30 minutes to 1 hour.
  • Then beat the chocolate at medium speed, using an electric mixer, until it is thick and light colored. If the chocolate has cooled enough, it will be ready to form truffles right away. If the chocolate is still too soft to hold its shape when rolled in a ball, spread over the bottom of a baking dish and smooth the top. Refrigerate until firmed, but still scoopable, up to 2 hours.
  • Pour the cocoa powder onto a deep plate or shallow bowl. Use a melon baller or small ice cream scoop to scoop out balls of chocolate and gently roll into a ball. Place them on the plate with the cocoa powder and roll between 2 forks to completely coat with the cocoa powder. Then use the forks to carefully transfer them to a baking sheet lined with parchment or waxed paper.
  • If making the truffles a day or two ahead of time, let them stand at room temperature for at least 1 hour before serving.

Tips:

  • Use high-quality chocolate: The quality of your chocolate will greatly impact the taste of your truffles. Choose a chocolate with a high cocoa content (70% or higher) and a smooth, rich flavor.
  • Temper your chocolate: Tempering is a process of heating and cooling chocolate in a controlled manner, which helps to stabilize it and give it a smooth, glossy finish. If you don't temper your chocolate, your truffles may be grainy or crumbly.
  • Use fresh cream: Fresh cream will give your truffles a richer flavor and a creamier texture. Avoid using ultra-pasteurized cream, as it can have a slightly cooked flavor.
  • Don't overmix the ganache: Overmixing the ganache can make it grainy or stiff. Mix it just until it is smooth and combined.
  • Chill the ganache before shaping: Chilling the ganache will help it to firm up and make it easier to shape into truffles.
  • Coat the truffles in cocoa powder, chopped nuts, or sprinkles: Coating the truffles in cocoa powder, chopped nuts, or sprinkles will add flavor and texture. You can also drizzle them with melted chocolate or caramel.
