I still request it every year for my birthday, and I make it for St. Patrick's Day, but it's rich and creamy any day. I used to make it for an after-school "snack" when I was in junior high. Pour milk over your serving or slather whipped cream. Sprinkle toasted slivered almonds for added yumminess. I suggest small portions, especially for children. My kids love to lick the pan when I'm done. I've also had great success with this recipe in making a chocolate pie with a vanilla wafer crust (sprinkle vanilla wafer crumbs on top)

2 ounces unsweetened chocolate squares
1 cup sugar
3 tablespoons cornstarch (or 1/3 cup flour)
1/4 teaspoon salt
3 egg yolks
1 teaspoon vanilla
2 tablespoons unsalted butter

  • In small saucepan, melt chocolate in milk over medium heat to scalding; do not boil.
  • In a medium saucepan, combine sugar, corn starch, and salt.

2 eggs
1/3 cup sugar

  • Scald milk in a saucepan over medium low heat (bring it almost to a boil in a thick bottomed saucepan, stirring constantly). Remove from heat, immediately add chocolate and stir until it has melted.
