1 tablespoon extra-virgin olive oil, or as needed
2 medium carrots, chopped
2 stalks celery, chopped
1 large onion, chopped
1 tablespoon dried parsley
salt and ground black pepper to taste
1 (3 pound) whole fryer chicken, giblets removed
water as needed
2 cups self-rising flour
½ cup vegetable shortening
1 teaspoon salt
2 quarts buttermilk

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add carrots, celery, onion, and parsley. Add salt and pepper and cook vegetables until they sweat, about 5 minutes. 2 tablespoons vegetable oil
2 chicken drumsticks
2 chicken thighs
salt and ground black pepper to taste
1 tablespoon butter
3 carrots, peeled and cut into coins
½ large onion, chopped
1 stalk celery, chopped
⅓ cup all-purpose flour
2 (14 ounce) cans chicken broth
1 (14 ounce) can water
Dumplings:
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ tablespoon dried parsley
½ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons butter
¾ cup milk

  • Heat oil in a large skillet over medium-high heat. Liberally season chicken drumsticks and thighs with salt and pepper and add to the hot skillet. Sear until crispy, 5 to 7 minutes per side. Remove chicken to a plate and allow to cool. Bone chicken, discarding any skin and bones.
