Steps:
- Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
- Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
- Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
- Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

CHEESY GARLIC BREAD
Our local pizza shop recently closed but they made the best cheesy garlic bread so I have tried to duplicate here, as a matter fact I have only finished making for our dinner tonight. I used recipe #481388 for the garlic butter. You could sub mozzarella cheese for the stringy cheese sticks, I would cut into cubes and stick in the lengthwise slit.

Steps:
- Adjust oven rack to lower-middle position and heat oven to 400 degrees. Cook garlic, 1 tablespoon butter, and water in small nonstick skillet over low heat, stirring occasionally, until straw colored, 7 to 10 minutes.
- Mix hot garlic, remaining butter, salt, and pepper in bowl and spread on cut sides of bread. Sandwich bread back together and wrap loaf in foil. Place on baking sheet and bake for 15 minutes.
- Carefully unwrap bread and place halves, buttered sides up, on baking sheet. Bake until just beginning to color, about 10 minutes. Remove from oven and set oven to broil.
- Sprinkle bread with cheese. Broil until cheese has melted and bread is crisp, 1 to 2 minutes. Transfer bread to cutting board with cheese side facing down. Cut into pieces.
- The serrated edges on a bread knife can pull off the cheesy crust. To prevent this, place the finished garlic bread cheese side down on a cutting board. Slicing through the crust (rather than the cheese) first will keep the cheese in place.
- Serve.

Tips:
- Use fresh ingredients for the best flavor. Stale bread or old cheese will not produce a tasty cheesy garlic bread.
- Choose a good quality loaf of bread. A hearty, crusty bread will hold up better to the garlic butter and cheese than a soft, fluffy bread.
- Don't be afraid to experiment with different types of cheese. A blend of cheeses, such as mozzarella, cheddar, and Parmesan, will create a complex and flavorful cheesy garlic bread.
- Be generous with the garlic butter. The more garlic butter you use, the more flavorful the cheesy garlic bread will be.
- Toast the bread before adding the garlic butter and cheese. This will help the bread to absorb the flavors better and will also prevent it from becoming soggy.
- Bake the cheesy garlic bread until the cheese is melted and bubbly. This will ensure that the cheese is properly melted and will also help to prevent the bread from becoming dry.
Conclusion:
Cheesy garlic bread is a delicious and versatile side dish that can be served with a variety of meals. It is easy to make and can be customized to your own liking. With a few simple ingredients, you can create a cheesy garlic bread that is sure to be a hit with your family and friends.
