2 cups vanilla wafer crumbs
3 bananas, sliced into 1/4 inch slices
1 ½ cups white sugar
¼ cup all-purpose flour
2 cups milk
3 egg yolks
2 teaspoons butter
2 teaspoons vanilla extract
3 egg whites
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line the bottom and sides of a 9-inch pie plate with a layer of alternating vanilla wafer crumbs and banana slices.
  • To Make Pudding: In a medium saucepan, combine 1 1/2 cups sugar with flour. Mix well, then stir in half the milk. Beat egg yolks and whisk into sugar mixture. Add remaining milk and butter or margarine.
  • Place mixture over low heat and cook until thickened, stirring frequently. Remove from heat and stir in vanilla extract. Pour half of pudding over vanilla wafer and banana layer while still hot.
  • Make another layer of alternating vanilla wafers and banana slices on top of pudding layer. Pour remaining pudding over second wafer and banana layer.
  • To Make Meringue: In a large glass or metal bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar, continuing to beat until whites are stiff. Spread meringue into pie pan, making sure to completely cover pudding layer.
  • Bake in preheated oven for 15 minutes, just until meringue is browned. Chill before serving.

1/2 cup margarine
1 1/2 cups white sugar
2 eggs
1 cup mashed banana (3-4 bananas)
1/4 cup milk
2 cups flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
4 teaspoons flour (heaping)
1 cup milk
1 cup sugar
1/2 cup margarine
1/2 cup shortening
1 teaspoon vanilla

Steps:

  • To make cake: Mix margarine, sugar and eggs together.
  • In separate bowl mash the bananas and add the milk. Once mixed, add the banana mixture to the margarine, sugar and eggs.
  • In separate bowl mix the remaining dry cake ingredients.
  • Mix the dry and wet cake ingredients together.
  • Pour into 9 x 13 inch pan and bake at 350 degrees Fahrenheit for 35 - 40 minutes. Cool to room temperature.
  • To make icing: Mix the flour, milk and sugar in a small sauce pan.
  • Cook to boiling stirring continuously. Cool to room temperature.
  • In a separate bowl whip the margarine, shortening and vanilla.
  • Mix the cooled pudding mixture with the whipped marg/shortening mixture until fluffy.
  • Top cooled cake with icing and enjoy!

My Mother made her banana pudding (ok, it's really vanilla pudding poured over sliced bananas) in the top of a double boiler on the stove. It was always topped with meringue and baked, then served warm. This is more of a modern version, made quickly in the microwave for convenience. Although this is served cold and topped with whipped topping, you can still reserve the egg whites, beat them with sugar, spread over the top of the pudding and bake until brown to serve it for Southern style warm banana pudding. Cooking time does not include cooling.

1/4 cup all-purpose flour
1/8 teaspoon salt
3 eggs, separated (whites discarded or used for meringue)
2 cups milk
2 tablespoons butter
1 tablespoon vanilla
3 bananas
36 vanilla wafers
1 (8 ounce) container whipped topping

Steps:

  • In a large microwaveable bowl, Mix sugar, flour, salt, egg yolks and milk.
  • Microwave on high power for 2 minutes.

3/4 c sugar, divided
1/3 c self-rising flour
3 eggs, separated
2 c milk
1/2 tsp vanilla extract
5 medium ripe bananas
1 box vanilla wafers (some for layers, some crush for topping)

Steps:

  • 1. Preheat oven to 350. Mix 1/2 c of the sugar with flour in a small saucepan. Blend in the egg yolks.
  • 2. Add vanilla extract and milk.
  • 3. Cook, uncovered, for 10-12 minutes or until thickened. Stir constantly.
  • 4. Remove from heat.
  • 5. Begin to layer the pudding (usually makes 3 layers). Add a layer of wafers in a casserole bowl.

5 large egg yolks
1/4 c cornstarch
1/2 c granulated sugar
1/4 tsp salt
2 c whole milk
3 Tbsp banana liqueur, optional
2 tsp pure vanilla extract
2 Tbsp cold unsalted butter
1 c vanilla wafer cookies, coarsely ground (about 15)
1/4 tsp cinnamon
1 Tbsp melted butter
2 tsp granulated sugar
2 large bananas, coarsely chopped

Steps:

  • 1. In a bowl. whisk the egg yolks with the cornstarch, the sugar and salt. Set aside. In a medium saucepan, bring the milk to a boil. Gradually whisk the milk into the egg yolk mixture until smooth. Transfer the pudding mixture to the saucepan and add the banana liqueur. Cook over moderate heat, whisking until the pudding is thick, about 3 minutes. Scrape the pudding into a bowl and whisk in the cold butter and vanilla. Cover with plastic and refrigerate until chilled, about 4 hours. Preheat oven to 325^. Line a baking sheet with parchment paper. In a bowl, combine wafers, cinnamon and remaining sugar and just a pinch of salt. Stir in the melted butter. Spread the crumble on the baking sheet, bake for 15 minutes, until lightly browned.
