2 30 ounce cans hominy, rinsed and drained (I used one white hominy can and one golden hominy )
1 cup sour cream
1 6 ounce can diced green chilis
2 cups monterey jack cheese (shredded)
1/2 cup Parmesan Cheese (shredded)

Steps:

  • Preheat oven to 350 degrees. In a medium sized bowl combine hominy, sour cream, green chilis and Monterey Jack cheese. Spread evenly into a 2 quart casserole dish. Top with Parmesan Cheese.
  • Bake for 1 hour or until golden and bubbly.

2 garlic cloves, minced
2 cans (15-1/2 ounces each) yellow hominy, drained
2 cups chopped tomatoes
1 can (4 ounces) chopped green chilies
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet that has been coated with cooking spray, saute onion and garlic until tender. Add the hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently. , Transfer to a 2-qt. baking dish that has been coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.

1 cup grated cheddar cheese
1 (4 ounce) can chopped green chilies, drained
1 (8 ounce) carton sour cream
1 small onion, chopped
salt, to taste
pepper, to taste

  • Mix all ingredients except the cheese.
  • Pour into 8 or 9" baking dish.
  • Sprinkle grated cheddar cheese on top.
