1 large lemon
2 cups granulated sugar
1 quart half-and-half
1 (15 ounce) can crushed pineapple in juice
1 pint whipping cream

  • From the lemon remove the zest & chop the zest fine, then squeeze juice from the lemon.
  • In a small saucepan, heat sugar, half-and-half & zest until sugar is melted, but DO NOT BOIL. Set aside to cool.

1 large can crushed pineapple undrained
1 large jar of pineapple preserves
one 2 liter bottle of sprite

1/4 cup light brown sugar
1 vanilla bean, split lengthwise
1 pineapple, peeled and left whole
1/2 cup water
1 cup sugar
2 cups water
2 cups buttermilk
1/2 cup key lime juice, fresh or bottled

  • Preheat oven to 375 degrees F.
  • Melt the butter over medium-high heat in a deep heavy ovenproof pot, large enough to hold the pineapple on its side. Add the brown sugar and vanilla bean.
