Categories     Punch Beverage

Time 20m

Yield 6-10 serving(s)

Number Of Ingredients 8

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

Tips:

  • Choose the right apples. Use a variety of apples that will give your wassail a balanced flavor. Tart apples like Granny Smith or Braeburn will add a nice acidity, while sweeter apples like Honeycrisp or Pink Lady will provide some sweetness.
  • Don't be afraid to experiment with spices. The spices you use in your wassail can really make a difference in the flavor. Try using a combination of cinnamon, cloves, nutmeg, and ginger. You can also add a bit of orange peel or lemon zest for a citrusy flavor.
  • Make your wassail ahead of time. Wassail is a great drink to make ahead of time. It will actually taste better if it has a chance to sit for a few hours or overnight. This will allow the flavors to meld together.
  • Serve your wassail warm. Wassail is traditionally served warm. You can heat it up on the stovetop or in the microwave. Be sure to serve it in a heatproof mug or glass.
  • Garnish your wassail with a cinnamon stick or orange slice. This will add a festive touch to your drink.

Conclusion:

Wassail is a delicious and festive drink that is perfect for the holiday season. It is easy to make and can be tailored to your own taste. So gather your ingredients and give this classic recipe a try. You won't be disappointed!
