HOLIDAY THUMBPRINT COOKIES

I obtained this recipe from my mother so I'm not really sure where it originated. It has been a holiday tradition to make these cookies each year.

Time 30m

Yield 2 dozen

Number Of Ingredients 9

1 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 tablespoon cornstarch
1 teaspoon baking powder
raspberry jam
mint jelly

Steps:

  • Cream butter and sugar.
  • Add egg and vanilla, beat until smooth.
  • In separate bowl, combine flour, cornstarch and baking powder. Mix well.
  • Stir in flour mixture with butter, sugar and egg. Mix well.
  • Roll dough in to 1 inch balls. Place on ungreased cookie sheet. Use the end of a wooden spoon or use your thumb to press an indention in the middle of the dough. Add a small amount of jam or jelly.
  • Bake at 375 for 8 - 10 minutes.

Tips:

  • Use high-quality ingredients. This will make a big difference in the taste of your cookies. Look for butter that is at least 82% fat, and use real vanilla extract instead of imitation.
  • Chill the dough before baking. This will help the cookies to keep their shape and prevent them from spreading too much.
  • Bake the cookies at the right temperature. The ideal temperature for baking thumbprint cookies is 375 degrees Fahrenheit. If you bake them at a higher temperature, they will brown too quickly and may burn.
  • Don't overbake the cookies. Thumbprint cookies should be baked until they are just set around the edges. If you overbake them, they will become dry and crumbly.
  • Let the cookies cool completely before filling them. This will help to prevent the filling from melting and running out of the cookies.

Conclusion:

Thumbprint cookies are a classic holiday treat that are easy to make and always a hit with family and friends. With a few simple tips, you can make sure that your thumbprint cookies turn out perfectly every time.
