3 cups cooked sweet potatoes ((mashed))
2 apples ((cored, peeled and sliced))
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 cup half & half
2 tablespoons butter

Steps:

  • Preheat oven to 350 and grease a 9X9 baking dish with cooking spray.
  • In a small bowl, combine brown sugar, cinnamon and ginger and mix well. Set aside.
  • Add sweet potatoes to baking dish and spread evenly in pan. Top with sliced apples. Pour half & half onto top of apples. Sprinkle with brown sugar mixture. Top with dots of butter.
  • Bake for 25-30 minutes or until apples are tender and mixture is bubbly.

1 pound sweet potatoes, peeled and cut into 1/2-inch cubes
3 tablespoons extra-virgin olive oil, divided
2 teaspoons kosher salt, divided
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper, divided
½ cup diced onion
½ cup diced red bell pepper
4 cloves garlic, minced
1 pound bulk regular pork sausage (such as Jimmy Dean®)
1 cup baby spinach leaves
½ cup shredded mozzarella cheese
1 tablespoon minced fresh rosemary
10 large eggs
2 tablespoons milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine sweet potatoes with 2 tablespoons olive oil, 1 teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper on a large baking sheet in a single, even layer; toss to coat well.
  • Bake in the preheated oven until slightly browned, about 30 minutes.

2 (18 ounce) cans sweet potatoes
1 lb baking apple (or any apple you like to use)
1/4 cup brown sugar
1 teaspoon cinnamon
2 teaspoons lemon juice
1/4 cup butter or 1/4 cup margarine, melted

Steps:

  • Slice potatoes 1/4 inch thick.
  • Slice apples 1/4 inch thick.
  • Put lemon juice on apples.
  • Mix brown sugar, cinnamon, and butter.
  • Alternate layers of potatoes and apples in a 1 1/2 quart casserole dish.
  • Sprinkle each layer with sugar mixture.
  • Bake at 350 degrees for 20 minutes or until browned and apples are tender.

3 large sweet potatoes
3 large yams
4 Red Delicious apples
1/2 cup golden raisins
1/4 cup honey
1/4 cup orange juice
2 teaspoons ground cinnamon
2 tablespoons vanilla extract
1/2 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
  • Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.
  • Place one layer of yams, apple slices and then sweet potatoes in the greased baking dish; repeat and make at least two layers of each. Top with the golden raisins.
  • To make a glaze, in a small pan stir together the honey, orange juice, cinnamon and vanilla extract. Stir over low heat until the consistency is even. Pour the glaze over the yam, sweet potato and apple slices.
  • Bake, uncovered, until browned, 15 to 20 minutes. Remove from the oven and sprinkle with powdered sugar. Serve immediately.

3 granny smith apples, peeled (or other firm apple)
1/4 cup fresh lemon juice
1/4 cup butter
1/2 cup light brown sugar
1/2 cup honey
2 tablespoons Bourbon or 2 tablespoons dark rum
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg or 1/4 teaspoon mace
1 cup pecan halves (optional)
1 cup miniature marshmallow (optional)

Steps:

  • Combine all sauce ingredients and cook on medium heat until sugar is dissolved, stirring frequently.
  • Set aside.
  • Slice apples lengthwise and toss with lemon juice.
  • Slice baked sweet potatoes.
  • Spray 9x13x2-inch casserole with non-stick cooking spray.

½ cup firmly packed brown sugar

2 large cooking apples - peeled, cored and cut into 1/4 inch rings
¼ cup all-purpose flour
¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
