2 tablespoons unsalted butter
1 small onion, minced
2 medium garlic cloves, minced (about 2 teaspoons)
3 cups heavy cream
1 cup whole milk
4 sprigs fresh thyme
2 bay leaves
2 teaspoons table salt
1/2 teaspoon ground black pepper
4 lbs russet potatoes, peeled and cut into 1/8- inch-thick slices
1 cup shredded cheddar cheese (about 4 ounces)

Steps:

  • Heat oven to 350 degrees.
  • Melt butter in large Dutch oven over medium-high heat until foaming subsides, about 1 minute.

  • Add garlic and sauté until fragrant, about 30 seconds.
  • Add cream, milk, thyme, bay leaves, salt, pepper, and potatoes and bring to simmer.
  • Cover, adjusting heat as necessary to maintain light simmer, and cook until potatoes are almost tender (paring knife can be slipped into and out of center of potato slice with some resistance), about 15 minutes.

  • Bake until cream has thickened and is bubbling around sides and top is golden brown, about 20 minutes. Cool for 5 minutes before serving.

MOM'S SCALLOPED POTATOES

Mom's Scalloped Potatoes image

This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

Time 1h15m

Yield 6

Number Of Ingredients 6

3 pounds potatoes, thinly sliced
½ onion, thinly sliced
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced and divided
salt and ground black pepper to taste
3 cups whole milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
  • Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
  • Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

Yield Serves 14 to 20

Number Of Ingredients 7

3 pounds Yukon gold potatoes, peeled, and sliced paper thin
3 cups milk
1 clove garlic
3 tablespoons unsalted butter, softened
Kosher salt and freshly ground pepper
1 cup heavy cream
5 ounces Gruyere cheese, grated

Steps:

  • Preheat oven to 325 degrees with a rack set in the lower third of oven. Combine sliced potatoes and milk in a large saucepan over high heat. Bring to a boil, and immediately reduce heat to low; cover and simmer until potatoes are just tender, about 3 minutes.
  • Place a colander over a large bowl and drain potatoes, reserving milk. You should have 2 cups of thick, starchy milk. If potatoes have absorbed more than 1 cup of milk, add enough milk to bring the reserved milk volume to 2 cups.
  • Rub a 3 1/2-quart oval baking dish with garlic and butter. Arrange sliced potatoes in the baking dish; season with salt and pepper. Dot with remaining butter and pour over reserved cooking milk and cream. Sprinkle cheese over top.
  • Transfer baking dish to oven and bake until cheese becomes deep golden brown and milk has reduced and thickened, 80 to 90 minutes. Remove from oven and serve immediately.

Tips:

  • Use a variety of potatoes: This will give your scalloped potatoes a more complex flavor and texture. Good options include Yukon Gold, Russet, and Red potatoes.
  • Slice the potatoes thinly: This will help them cook evenly. Aim for slices that are about 1/8-inch thick.
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will not cook evenly. Make sure there is enough space between the potato slices so that they can cook evenly.
  • Use a good quality cheese: The cheese is one of the most important ingredients in scalloped potatoes, so it's worth investing in a good quality cheese. A sharp cheddar or Gruyère are both good options.
  • Season the potatoes well: Don't be afraid to season the potatoes well with salt and pepper. This will help to bring out their flavor.
  • Bake the potatoes until they are golden brown: The potatoes should be cooked through and golden brown on top. This will take about 45 minutes to an hour.

Conclusion:

Scalloped potatoes are a classic holiday side dish that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own taste. With a little planning and preparation, you can make scalloped potatoes that will be the star of your holiday meal.
