HOLIDAY RICE DISH

A light tasty rice side dish that can be served on any occassion. Had this recipe for a couple of years and use it regularly.

Categories     Rice

Time 45m

Yield 6 side serves

Number Of Ingredients 10

2 cups chicken stock
1 cup rice
3 tablespoons butter
2 onions, sliced into wedges
1 tablespoon brown sugar
1 cup dried cranberries
2/3 cup champignon mushrooms
1/2 cup toasted slivered almonds
1/2 teaspoon grated orange rind
salt

Steps:

  • Combine rice and broth in saucepan and bring to boil.
  • Reduce heat to low, cover and simmer until rice is tender and broth absorbed, about 20 minutes.
  • In a medium skillet, melt butter over medium-high heat and add onions and sugar.
  • Saute until butter is absorbed and onion is translucent and soft.
  • Lower heat and cook onions for another 15 minutes or until they are caramelised.
  • Stir in cranberries and mushrooms.
  • Cover skillet and cook for 10 minutes until cranberries soften and swell.
  • Stir in nuts and orange zest, then fold into the cooked rice.
  • Add salt to taste.

Tips:

  • Use high-quality rice: Choose a long-grain rice like basmati or jasmine for a fluffy texture and distinct flavor. These rices hold their shape well and won't become mushy when cooked.
  • Rinse the rice thoroughly: Rinsing the rice removes starch and impurities, resulting in separate, fluffy grains of rice after cooking.
  • Use the right amount of water: The general rule of thumb is 1 cup of rice to 1.5 to 2 cups of water. However, this can vary depending on the type of rice and the desired consistency, so adjust as needed.
  • Cook the rice over low heat: This allows the rice to cook evenly and prevents it from becoming scorched or mushy. Cover the pot tightly to trap steam and create fluffy, tender rice.
  • Let the rice rest before serving: Once the rice is cooked, let it sit for 5-10 minutes with the lid on. This allows the rice to absorb any remaining moisture and become even more flavorful.
  • Add herbs, spices, and other ingredients for flavor: Feel free to experiment with different herbs, spices, and ingredients to create unique and flavorful rice dishes. Common additions include garlic, onions, ginger, turmeric, cumin, and coriander.
  • Serve the rice as a side dish or main course: Rice is a versatile dish that can be served alongside curries, stews, grilled meats, or vegetables. It can also be used as a base for dishes like fried rice, risotto, and paella.
