1 teaspoon whole cloves
1 apple, sliced
2 (16 ounce) cans whole berry cranberry sauce
1 (16 ounce) can chicken broth
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1 orange, zested

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pork roast into a roasting pan; push whole cloves into the meat. Cover the roast with apple slices.
  • Mash cranberry sauce in a bowl with a potato masher; stir chicken broth, cinnamon, nutmeg, and ginger into cranberries. Pour about half the cranberry mixture over the pork roast. Cover with a lid or a sheet of aluminum foil.

1 cup soy sauce
1 cup dry sherry or chicken broth
2 tablespoons ground mustard
2 teaspoons ground ginger
2 teaspoons dried thyme
4 garlic cloves, minced
1 boneless rolled pork loin roast (4 to 5 pounds)
CURRANT SAUCE:
1 jar (12 ounces) red currant jelly
2 tablespoons dry sherry or chicken broth
1 tablespoon soy sauce

Steps:

  • In a bowl, combine the soy sauce, sherry or broth, mustard, ginger, thyme and garlic; mix well. Pour 1 cup marinade into a large resealable plastic bag; add the roast. Seal bag and turn to coat. Refrigerate for 3 hours or overnight, turning occasionally. Cover and refrigerate the remaining marinade for basting., Drain and discard marinade. Place the roast on a rack in a roasting pan. 1 tablespoon freshly ground black pepper
1 tablespoon ground allspice
1 tablespoon kosher salt
1 tablespoon light brown sugar
3 tablespoons rosemary leaves, plus 6 sprigs
2 tablespoons extra-virgin olive oil, plus more for brushing
2 large pork tenderloins (about 3 pounds)
12 ounces thin-sliced bacon (about 12 slices)
Cranberry sauce (for serving; optional)
