PECAN CRANBERRY SPREAD
I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

Steps:
- Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper. Cool completely. Separate pecans if necessary. (Can be prepared up to 1 week ahead. Store in airtight container.)
Tips:
- To make the cranberry orange pecan spread, you will need fresh cranberries, oranges, pecans, sugar, and pectin. You will also need a saucepan, a food processor, and a jar for storage.
- When choosing cranberries, look for plump and deep red berries. Avoid berries that are bruised or soft.
- To zest an orange, use a microplane or a fine grater to remove the outermost layer of the orange peel. Avoid getting any of the white pith, as this can be bitter.
- To chop the pecans, place them in a food processor and pulse until they are finely chopped. You can also chop the pecans by hand with a sharp knife.
- When cooking the spread, be sure to stir it constantly to prevent it from burning. The spread should be cooked until it has thickened and reached a temperature of 220 degrees Fahrenheit.
- Once the spread has cooled, transfer it to a jar and store it in the refrigerator for up to 2 weeks.
Conclusion:
The cranberry orange pecan spread is a delicious and versatile condiment that can be used in a variety of ways. It can be spread on toast or crackers, used as a topping for yogurt or oatmeal, or even used as a glaze for chicken or pork. The spread is also a great way to use up leftover cranberries after the holidays.
