1/4 teaspoon freshly grated nutmeg

1/4 cup plus 1/8 cup granulated sugar
12 ounces aged rum
6 ounces aged brandy
Freshly grated nutmeg, for garnish

Steps:

  • For the mulled cider: Combine the peppercorns, star anise, allspice, cinnamon, cloves and cardamom in a large stockpot over medium heat. Toast the spices until aromatic, 3 to 5 minutes. Pour in the cider, carrot juice, ginger juice, sugar, orange zest, nutmeg and kosher salt. Reduce the heat to low and let the mixture sit uncovered until the cider is aromatic and the spices are well infused, 1 to 2 hours. Strain the cider through a fine sieve or cheesecloth; discard the solids. (The cider can be made in advance and reheated prior to serving.)
  • For the eggnog batter: Separate the whites and yolks of the eggs into 2 medium size mixing bowls. Whip the yolks with the nutmeg, cinnamon, rum and salt. Gradually add 1/4 cup of the sugar. Mix until the texture is silky and the sugar is fully incorporated. Set aside.
  • Whip the egg whites on medium-high speed, gradually incorporating the remaining 1/8 cup of sugar. Whip until stiff peaks form.
  • Gently fold the egg white mixture into the yolk mixture. This batter has a lifespan of about one evening. Be sure to use fresh eggs as these will be served in a raw state.
  • To assemble the holiday eggnog: For each drink, mix together 4 ounces of the hot mulled cider, 2 ounces of the eggnog batter, 1 ounce of the rum and 1/2 ounce of the brandy in a heat-treated glass or mug. Garnish with grated nutmeg.

  • Heat oven to 350 deg. Spray oven-safe 11-inch skillet or a 9 X 13 cake pan with nonstick cooking spray.

  • Bake 35 to 40 min. Cake is done with toothpick inserted in center of cake comes out clean.

12 Pirouette cookies or cookies of your choice
1/2 cup graham cracker crumbs (about 8 squares)
3 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
2 cups cold eggnog, divided
1-1/2 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
2 to 3 teaspoons rum extract
1/8 teaspoon ground nutmeg
Whipped topping

Steps:

  • Crush four cookies; set remaining cookies aside for garnish. In a small bowl, combine the crushed cookies, graham cracker crumbs and butter. Divide among eight serving dishes., In a large bowl, beat cream cheese until smooth. Gradually beat in 1 cup eggnog. Add the milk, pudding mix, extract, nutmeg and remaining eggnog. Beat on low speed for 2 minutes or until thickened. , Spoon about 3/4 cup into each dish. Cover and refrigerate for 8 hours or overnight. Garnish with whipped topping and reserved cookies.

I got this recipe from my mother's Southern Living Cookbook that she has had for at least 15 years or so. This eggnog is so creamy and delicious and the nutmeg gives it that bit of spice that makes this creamy holiday treat the perfect touch. I made this in my teen years a few times for Thanksgiving and Christmas and my family...

6 large eggs, separated
3/4 c sugar
1/2 tsp vanilla extract
1/4 tsp ground nutmeg
3 c whipping cream
2 c milk
1/4 c sugar
***ground nutmeg, for sprinkling

Steps:

  • 1. Beat egg yolks until thick and lemon-colored; gradually add 3/4 cup sugar, vanilla and 1/4 tsp nutmeg, beating well at medium speed of an electric mixer. Cover & chill for 8 hours.
  • 2. Place chilled mixture in a punch bowl. Gradually stir in cream & milk. Beat egg whites (at room temperature) in a large mixing bowl until soft peaks form. Gradually add 1/4 cup sugar and beat until stiff. Fold whites into chilled mixture. Sprinkle with nutmeg.
  • 3. Feel free to add cinnamon sticks or candy canes into your glass of eggnog for added flavor. You can also top with whip cream.

2 tablespoons cornstarch
12 packets Equal sugar substitute
2 eggs, beaten
2 teaspoons vanilla
1/4 teaspoon ground cinnamon
2 cups skim milk, chilled
1/8 teaspoon ground nutmeg

Steps:

  • Mix 2 cups milk, cornstarch, and Equal in a small saucepan; heat to boiling.
  • Boil for 1 minute, stirring constantly.
  • Mix about half of the milk mixture into eggs; return egg mixture to remaining milk in saucepan.
  • Cook over low heat until slightly thickened, stirring constantly.
  • Remove from heat; stir in vanilla and cinnamon.
  • Cool to room temperature; refrigerate until chilled.
  • Stir 2 cups chilled milk into custard mixture; serve in small glasses.
  • Sprinkle with nutmeg.
  • Cook time does not include chill time.
