1/4 cup pecans
1/4 cup walnuts
1/4 cup sour cream
2 tablespoons thinly sliced chives
2 tablespoons mayonnaise
1 tablespoon honey
1 tablespoon fresh lemon juice

3 stalks celery, thinly sliced
2 crisp apples, such as Pink Lady or Gala, cored and cut into 1/2-inch pieces
1 cup green grapes, halved
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans and walnuts on a rimmed baking sheet and bake until lightly toasted, about 6 minutes. Cool completely and roughly chop.
  • Stir together the sour cream, chives, mayonnaise, honey, lemon juice, 1/2 teaspoon salt and pepper to taste in a large bowl. Add the celery, apples, grapes, cranberries and nuts and toss to combine; season with salt and pepper to taste. Serve immediately.

This is an old family recipe. I don't know where it came from originally. I am made to bring this salad every Thanksgiving, my sister says it's not really Thanksgiving without it! It does sit overnight to mellow the cranberries, but the prep is quick.

12 -16 ounces fresh cranberries
1 (10 ounce) bag mini marshmallows
1 cup sugar
1 cup heavy cream
1 tart green apple, chopped
1 cup red seedless grapes, halved
1/2 cup broken walnuts or 1/2 cup pecans

Steps:

  • Rinse the cranberries and remove any stems or leaves.
  • Grind the cranberries and marshmallows together using a meat grinder or chop in a food processor.
  • Turn the cranberry mixture into a bowl and add the sugar.
  • Stir well, then cover and refrigerate overnight.
  • Next day, whip the cream to soft peaks, then gently stir into cranberry mixture.
  • Add the chopped apple (do not peel it), halved grapes and nuts and just mix through.

1 cup celery, chopped
1 1/2 cups seedless grapes, halved (I prefer using green grapes)
1 cup dried cranberries
1 cup walnuts, chopped
1/4 cup plain fat-free yogurt
2 tablespoons orange juice
1 tablespoon fresh lemon juice
1 tablespoon honey
1/4 teaspoon salt

Steps:

  • In a large bowl, combine the apples, celery, grapes, cranberries & walnuts.
  • In a small bowl, whisk together the yogurt, the two juices, honey & salt, then gently toss the salad & dressing together to combine thoroughly.
  • Great as is, or serve over a leaf or two of lettuce.

1 (20 ounce) can crushed pineapple, with juice
2 cups white sugar
½ pint heavy whipping cream
