CRANBERRY WALDORF SALAD
This is an old family recipe. I don't know where it came from originally. I am made to bring this salad every Thanksgiving, my sister says it's not really Thanksgiving without it! It does sit overnight to mellow the cranberries, but the prep is quick.

HOLIDAY CRANBERRY WALDORF SALAD
This is lovely to serve on the holiday table along side of a turkey or a ham...and it is so easy to make...if desired, you could add some seedless red grapes to the salad if desired...this recipe is enough for four people, so double or triple if you are having alot of guests for dinner.

Steps:
- In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)
- Before serving, whip the cream until soft peaks form. (You can sweeten the whipped cream with a little sugar, if desired.) In a large bowl, mix together the cranberry mixture, walnuts and marshmallows. Fold in the whipped cream and store in refrigerator until serving.

Tips:
- Prep Ahead: For a quicker assembly, chop celery, walnuts, and cranberries the day before. Store separately in airtight containers in the fridge.
- Fresh Apples: Choose crisp apple varieties like Honeycrisp, Granny Smith, or Pink Lady for a refreshing crunch.
- Plump Cranberries: Use fresh or frozen cranberries. If using frozen, thaw them completely before adding them to the salad.
- Cream Cheese Chilling: Keep cream cheese chilled until ready to use, as room temperature cream cheese can become too soft and difficult to work with.
- Mayo Consistency: Use full-fat mayonnaise for a creamier, richer dressing. If it's too thick, add a splash of milk or lemon juice.
- Chilling Time: Chill the salad for at least 30 minutes before serving. This allows the flavors to meld and the salad to firm up.
- Garnish Elevate: Before serving, garnish the salad with additional chopped walnuts, cranberries, or a sprinkle of paprika for a touch of color and elegance.
