2 cups fresh or frozen cranberries
⅓ cup granulated sugar
1 tablespoon cornstarch
1½ cups graham cracker crumbs
1 tablespoon granulated sugar
½ cup unsalted butter (melted)
¼ teaspoon kosher salt
16 ounces cream cheese (softened or at room temperature)
14 ounces sweetened condensed milk
1 tablespoon vanilla extract
¼ cup fresh lemon juice

Steps:

  • Combine the sugar and cornstarch in a small saucepan. Mix well. Add ½ cup plus two tablespoons of cold water and the cranberries and place the pan over medium heat. Stir to combine.
  • Bring the cranberry mixture to a boil and reduce the heat to low. Simmer for 10 minutes, remove the pan from the heat, and set aside to cool.
  • Combine the graham cracker crumbs, sugar, salt, and butter in a large bowl. Mix to combine.

2 tablespoons margarine, melted
2 cups unblemished cranberries, rinsed and drained
2/3 cup water
2/3 cup sugar
1 tablespoon unflavored gelatin, dissolved in
1/4 cup cold water
8 ounces light cream cheese, softened
3/4 cup light ricotta cheese
1 teaspoon vanilla

Steps:

  • To make crust, mix crumbs and margarine together thoroughly and press into an 8 or 9 inch pie pan. Set aside.
  • To make filling, put cranberries, water and sugar into a saucepan, heat to boiling, then cook at a boil for 10 minutes, stirring occasionally.
  • Remove from heat and add gelatin mixture, stirring until dissolved.

1 tub (24.3 oz.) PHILADELPHIA No Bake Cheesecake Filling Original
1 ready-to-use graham cracker crumb crust (6 oz.)

Steps:

  • Combine flour and brown sugar in medium microwaveable bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Microwave on HIGH 3 min., stirring after each minute. Microwave additional 1 to 2 min. or until crumb mixture is crisp and golden brown, stirring every 30 sec. Add nuts; mix well.
