- For the sauce: In a blender or food processor, combine the peppers with the stock, garlic, onions, cilantro and some salt and pepper, then puree. In a saucepot over medium heat, melt the butter, then whisk in the flour. Add the milk and cream and raise the heat a bit. Add the poblano puree and simmer to thicken and cook the sauce, 20 to 25 minutes.

HOLIDAY CORN CASSEROLE
My favorite way to serve corn for the holidays. It makes a festive side dish and is easy to assemble. I first served this on December 31st, 1999. The green chile adds a southwestern flavor, but it tastes great without.

Tips for Making a Delicious Holiday Corn and Turkey Casserole:
- Use fresh ingredients: Fresh corn, turkey, and vegetables will give your casserole the best flavor. If you can, use organic ingredients for the best quality.
- Don't overcook the turkey: Overcooked turkey will be dry and tough. Cook it just until it reaches an internal temperature of 165 degrees Fahrenheit.
- Use a variety of vegetables: This will give your casserole a more complex flavor and texture. Some good options include carrots, celery, onions, and mushrooms.
- Use a flavorful cheese: A sharp cheddar cheese or a Monterey Jack cheese will give your casserole a nice cheesy flavor. You can also use a combination of cheeses for a more complex flavor.
- Season the casserole well: Use salt, pepper, and other herbs and spices to taste. You can also add a splash of white wine or chicken broth for extra flavor.
- Bake the casserole until it is golden brown and bubbly: This will ensure that the casserole is cooked through and that the cheese is melted and gooey.
Conclusion:
