1 container (16 ounces) cheddar cheese spread, softened
1 package (8 ounces) plus 3 ounces cream cheese, softened
3 tablespoons butter, softened
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
Paprika
Snipped fresh parsley
Assorted crackers

Steps:

  • In a medium bowl, combine cheese spread, cream cheese, butter, Worcestershire sauce and garlic powder. Blend thoroughly. Chill at least 3 hours or overnight. Sprinkle with paprika and parsley. Serve with crackers.

2 cups grated extra-sharp white cheddar cheese
1 bunch of green onions
3/4 cup chopped pecans
1 cup mayonnaise (miracle whip does not make a good substitution in this recipe)
1/2 teaspoon cayenne pepper (or more to taste)

Steps:

  • Grate extra sharp white cheddar. You'll need 2 cups. You can use a food processor or a hand grater to accomplish this. I have done it with both. The food processor just makes the process faster.
  • Wash and chop 1 full bunch of green onions.
  • Measure and set aside 1 cup of mayonnaise.
  • Chop the pecans (to desired piece size). You'll need 3/4 cup chopped pieces. Tip: you can find small bags of pieces already chopped in the baking aisle of most grocery stores if you don't want to buy a large bag. I prefer to buy bulk bags since I do a lot of baking.
  • Measure out 1/2 teaspoon cayenne pepper and set aside.
  • Add 2 cups grated extra sharp white cheddar to a large mixing bowl or stand mixer. I prefer to mix mine in my kitchen-aid stand mixer, but by hand works just as well.
  • Combine 1 cup mayonnaise to shredded cheese and mix until mostly incorporated.
  • Add chopped pecans and mix again.
  • Incorporate cayenne pepper to taste. 1/2 teaspoon is recommended and doesn't offer extreme heat.
  • Plate for immediate serving or cover and refrigerate for later.
  • Enjoy!

2 c old cheddar cheese, grated
8 oz cream cheese, room temperature
4 oz butter, room temperature
1/4 c beer, non-alcohol beer, white wine or buttermilk
1 pinch black pepper
1 small onion, minced finely
sprig parsley or sprinkle paprika to decorate

Steps:

  • 1. In a large bowl or in food processor, combine softened cream cheese and butter until thoroughly blended.
  • 2. Add pinch pepper and just enough liquid (beer, non-alcohol beer or white wine) to make the cream cheese mixture fluffy.
  • 3. Add grated old Cheddar cheese and combine thoroughly. You may need to add just a bit more liquid so that it retains nice texture, but not to worry if it's a bit thick and heavy. It still tastes great!
  • 4. Add onion, but combine only until blended in. If using food processor, pulse on/off a couple of times, but do not overwork or onion taste can become overwhelming.
  • 5. Spoon into a bowl and sprinkle with a parsley sprig or some paprika so that it looks pretty. Remove from fridge about 20 minutes before serving. Serve with crackers.
