My mother made these every Christmas to give as gifts. They were one of my favorite treats. It's loaded with apples, dates and nuts - yummy! Be careful not to over bake or it will become dry. I test it with a cake tester (or toothpick) to be sure it's done.

2 cups all-purpose flour, sifted
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 1/2 teaspoons baking soda
1 tablespoon baking cocoa (unsweetened)
1/4 teaspoon salt
1/2 cup vegetable shortening
1 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons milk (or soy milk)
3/4 cup applesauce
1 1/2 cups apples, peeled & shredded
1 1/2 cups dates, pitted & chopped
1 cup walnuts, chopped

Steps:

  • Combine & sift together the flour, cinnamon, nutmeg, soda, cocoa & salt. Set aside.
  • Cream shortening & sugar until light.
  • Add vanilla, milk & applesauce to creamed mixture.
  • Add sifted ingredients & mix well.
  • Mix in apples, dates & walnuts. Blend well.
  • Spoon into a greased loaf pan (waxed paper cut to fit bottom of pan helps prevent sticking).
  • Bake at 325 degrees for 1 hour & 45 minutes. (Test for doneness).
  • Keeps for weeks in the refrigerator or months in the freezer. Keep tightly wrapped in foil and/or plastic wrap.

Unsalted butter, for buttering the baking pan
6 small Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
  • Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
  • For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
  • Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.

1/2 teaspoon salt
4 eggs
1 cup vegetable oil

4 medium tart apples, peeled and thinly sliced
2 teaspoons ground cinnamon

Steps:

  • In a bowl, combine flour, 2 cups sugar, baking powder and salt. This is a wonderful fruit cake. It is my friend's secret family recipe, after I tasted it I begged and begged for the recipe. After a couple of years of having me beg, she finally relented and gave me this recipe. It is many years old so there were not packaged and chopped fruit available. It was a lot of work to make. I'm putting it here so I don't lose it.

3 cups dried apples
1 1/2 cups sugar
2/3 cup salad oil
2 eggs
2 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon allspice
1 1/2 teaspoons baking soda
1/2 teaspoon nutmeg
1/2-1 cup nuts (walnuts are best)
1 (6 ounce) jar cherries
1 1/2 dates
3/4 lb pitted dates

Steps:
