- Preheat oven or covered BBQ grill to 350°F.
- Wash potatoes and cut a thin slice off each end.
- Plunge an apple corer through one cut end (lengthwise) as far as it will go, twist and remove.
- Sprinkle bacon with pepper, top with a scallion"tail" and fold the bacon over the scallion.
- Insert into the potato, packing in the bacon and scallion with a finger, trim if necessary to leave room at both ends for a"plug".
- Cut slices off the potato cores, wide enough to plug the holes, when the slices are turned sideways.
- Plug both ends of the potatoes, wrap in foil and bake 50- 60 minutes or until done.

Cool for 10 minutes; remove from pans to wire racks to cool completely., For frosting, cream shortening, butter, sugar and vanilla in a bowl. Gradually beat in milk until light and fluffy. Tint with green paste food coloring. Place cake on a serving platter for 10-in. round covered board; frost between layers and top and sides of cake., Insert tip into pastry or plastic bag; fill with frosting. Pipe grass along bottom edge of cake., Place coconut in a plastic bag; add 5-6 drops green liquid food coloring. Shake until color is evenly distributed. Set aside. For the green, trace a 4-in. circle on waxed paper; cut out. Place on top of cake 1 in. from an edge. Sprinkle green coconut over the cake top; remove the waxed paper. Insert the chocolate kiss, point side down, into green for the hole. , For the pin, unroll one fruit roll-up. Cut a 2-1/4x2x1-in. triangle from the red portion; set aside the unused portion.
