HOISIN SLIVERED BEEF WITH GREEN BEANS

My mom saw this on TV and thought I'd like the recipe. I think it was on the Today show. The original recipe is from Sandi Richard's but I've changed it to suit our tastes a bit. I've also made this without the sweet chili sauce and it tasted just fine. Easy, quick recipe using what I normally have on hand.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 teaspoon olive oil, extra-virgin
1 teaspoon sesame oil
1 1/2 lbs flank steaks, trimmed
2 teaspoons fresh garlic
1 tablespoon fresh ginger
1/4 cup soy sauce, reduced-sodium
1 tablespoon rice vinegar
2 tablespoons fish sauce
2 tablespoons Thai sweet chili sauce
2 tablespoons hoisin sauce
1/2 teaspoon sambal oelek (crushed chili paste)
1 lb frozen green beans (I use fresh)
1 small onion, thinly sliced
cornstarch (optional)

Steps:

  • Heat both oils in a large nonstick fry pan or wok at medium-high. Cut beef into thin short strips, against the grain. Add beef to pan, toss and sauté slightly for 5 minutes.
  • Add sliced onion and green beans, toss. Add garlic and ginger. (I like my beans a little more done. I usually put the cover on to cook them for about 5 more minutes).
  • Reduce heat to medium-low. Add soy sauce, rice vinegar, fish sauce, sweet chili sauce, hoisin sauce and chili paste. Stir to combine.
  • (Add mixture of cornstarch and water if desired to thicken).
  • Serve with rice.

GRILLED HOISIN BEEF

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

Time 2h18m

Yield 2

Number Of Ingredients 13

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

Tips:

  • Choose the right cut of beef: Flank steak or skirt steak are good choices for this dish, as they are both flavorful and tender when cooked quickly over high heat.
  • Slice the beef against the grain: This will help to make the beef more tender.
  • Marinate the beef for at least 30 minutes: This will help to tenderize the beef and infuse it with flavor.
  • Cook the beef over high heat: This will help to create a nice sear on the outside of the beef while keeping the inside tender.
  • Don't overcook the beef: Beef should be cooked to an internal temperature of 145 degrees Fahrenheit for medium-rare, or 160 degrees Fahrenheit for medium.
  • Use fresh green beans: Fresh green beans are more flavorful and have a better texture than frozen green beans.
  • Blanch the green beans before stir-frying: This will help to remove the raw flavor from the green beans and make them more tender.
  • Add the green beans to the stir-fry at the end: This will help to prevent them from overcooking.
  • Serve the hoisin slivered beef with green beans immediately: This dish is best served hot and fresh.

Conclusion:

Hoisin slivered beef with green beans is a delicious and easy-to-make dish that is perfect for a weeknight meal. The beef is tender and flavorful, the green beans are crisp and tender, and the hoisin sauce adds a sweet and savory flavor to the dish. This dish is sure to please everyone at the table.
